As many know I (Barbie) work front of House at The Charm Farm Market and Butcher in Elkins WV. It was a romantic sugarhouse dinner at Ice’s Farm at Blue Rock last night. Charm Farm house made all beef dogs on the evaporator grate with some left over homemade tortillas. There was some delicious Butterkase cheese from the Charm Farm on there as well that didn’t make the photo. First night of cooking always feels like a lot of work with a little end result but the second day is always more satisfying! Our hydration during cooks is always ice cold sap from the tank. Cheers to a successful albeit late start to the season. May Spring not arrive all at one time 🥂

Farm update! Tree tapping completed this past weekend, let the sap flow! Many thanks to our Charm Farm farmily (in case y’all don’t know I am Front of Shop Manager at The Charm Farm in Elkins - who stocks our syrup and uses it in several of their products) Many came out and helped with tapping and made it great fun. Sure wish I had pictures to share! We will keep you updated on our season and we will be featured on The Charm Life Podcast season 2, episode 1 in March!

The maples in Blue Rock are getting a favorable cold spell, here in late Fall at our higher elevations. The trees are probably fully dormant right now, having already converted their starch stores into sweet sucrose, and are simply storing it in the sapwood of the trees. Did you know that the sugars being stored in the cells of the wood also act as a protective anti-freeze for the coming long days of freezing temps?
