I was sitting on a tailgate in a field this week and paused to really consider the view. Idaho is beautiful.

The natural beauty and resources that are in our care come with a big responsibility. We aim to bring you products that use the best management practices and produce the most nutritious foods. Always thinking forward to the future generations who will need healthy land and healthy food.

I am starting the week off strong.

Yesterday was busy packing a full load of orders and organizing our cold storage in anticipation of the next round of beef coming in a couple weeks.

I ended the day yesterday having to squeeze down the alley to get to boxes and find more space to stack orders. This morning it looked empty after I had loaded the trailer!

Thankful for all our customers who keep us busy and a husband who brings me a hot latte to keep me moving.

Rarely am I able to win in all my roles during a day. This week was no different.

Monday - I was an excellent producer and wrapped up poultry processing for the season.

Tuesday - I was an excellent homemaker/gardener and took Red Star Ranch bones with our homegrown onions to make French Onion soup. 17 jars are in the pantry for a quick lunch or to season a roast this winter. Plus an additional 6 jara of bone stock.

Wednesday- I juggled.

Today - I am being a present mom. Currently in the passenger seat on our way to the high school football game so I can sneal in the post I was supposed to make on Tuesday.

What do all these beef cuts have in common?

Right now I need the meals that re-heat well more than anything. Boys are coming home from practice at different times and they are starving! All of them make a delicious first meal and then can be used as the shining star of enchiladas for a leftover meal. Do the big slow roast or large batch of carne asada for a first round and the leftovers make for a quick casserole or slow cooker meal later in the week.

This is in the works for a brisket next week (my favorite base for enchiladas). This week - I cooked a 5 # package of ground beef and will be using the leftovers for chili tomorrow night.

Life is busy, fast and chaotic. It is the little tweaks to cooking that keep meals on the table.

ALL three of the ladies of the Idaho Food Coop have birthdays in August. Jaime's was earlier in the week, Shawna's is today and mine is next week.

Some of you may not know but Shawna and I are cousins - our Nampa, Meridian and Penguin customers will know her! There is a picture at my parent's house of us with my horse...we are adorable. I don't have it so you get a picture of our dad's when they were little boys. 🥰 I recently was given a jump drive with hundreds of pictures that my Grandpa took over the years. There is something special about those old photographs that aren't perfectly framed, re-posed or touched up.
