I dont have a great way to store onions. The best method that I have seen is flat racks in a temperature controlled room.

My storage is in my bathroom. My aunt and uncle yanked out the bathtub that never got used and put in custom shelves.

That is where the bulk of my pantry is stored.

My onions usually last a couple months before they start turning. When they start going bad, I slice or dice and put into the freezer.

Storing in the hanging baskets is new so I will see how long they last this way.

I am always looking for ways to maximize storage space.

I like when clean up is easy! Processing all 3 bushels of corn left a mess and once the chickens pecked through what they wanted I came out the next day and hosed everything down.

Reset and onto the next project!

Last year we did not get any bushels of corn unfortunately. The year before we got 2 and it did not last us until the next season. I think we ran out before the year was over.

I am trying this year to can as much as possible to see how long my family of 5 can eat off of it.

I cant grow good corn, my soil does not have enough life in it yet. I fill in the gaps of my garden with other local producers.

I used to treat putting up food as my duty. I would process, prepare and can myself. The kids would help shuck when I did corn or I will pull in another family adult to help.

Then I stopped and thought. My kids can help do more.

This year everyone helps. They help snap, shuck, cut the kernels off the cob, they will slice and ladle and do anything else in their range.

Putting up food is not just my job. It is our job.

We spent 2.5 hours last night prepping this corn for me to can today.

The kids help through all of it, the Handyman pulled up a chair. There was minimal complaining, we just did the work.

As Curtis liked to repeat back to me
"It is good family time mom"

Sourdough bagels are my absolute favorite to make.
1) I can start them the day or two or three before and finish them up another day.
2) They have more flavor.
3)Even though it is a grain, it is still a fermented food!
4) Easy snack, breakfast or dinner option.

Once I figured out sourdough I thought everything would be sourdough. My family disagreed. 3 of us like it and 2 of us do not.

So I am working in the weekly schedule of making two regular loaves a week and a batch of bagels every other week.

One thing I have learned is it does not have to be all or nothing with anything related to homesteading/farmsteading or whatever lifestyle you are living.

It is a little gross. It goes against the societal norm of mold is bad. It is magical to watch the process take place.

So far everything is trucking a long like it is supposed to be. The only thing I am worried about is the cracks I had prior to ripening. I will have to find a different technique to get the cheese to seal up like it is supposed to.

We will see in a couple weeks. Cheesemaking is truly a test of my patience.
