Extra Sage Breakfast Sausage from Meadors Homestead.
Yesterday was opening day for the Judd Hill Farmers Market. After picking up a new quart of honey from Alhambra Orchard & Apiary (my absolute favorite honey), we saw Meadors Homestead across the way and visited for some fresh pork. They were happy to talk about their farm, and you can tell they love what they do. We cooked up the sausage this morning and it is yummy! The perfect amount of spice and so tender. Check them out at the next market!

Have you had a bad experience with Wagyu?

There are a few things you can do to make your Wagyu steak perfect.
• Bring to room temperature for steaks
• Seasoning - Use minimal seasoning. A sprinkle of kosher salt and a light touch of pepper is usually sufficient. The natural flavor of wagyu is rich and buttery.
• Don’t overcook! Don’t overcook! Don’t overcook! Medium-rare maximizes the flaors and texture. Use a meat thermometer to check for doneness (145°F for medium-rare).
• Let the steak rest for 3-5 minutes before serving to allow juices to redistribute.
• Enjoy!!!!
