Food brain idea: Using leftover summer bbq foods-

Even (1- 1.5in) chunks of jalapeño cheddar saysage/brats

Ledtover chili or chili con queso ĺcold)

Jiffy cornbread mix

In short... wrap the sausage in the chili, put it in thr freezer for about 15min to firm up. Drop the balls in the cornbread batter. Deep fry in 375° oil til GBD... drain on rack or paper towels and sprinkle with salt. Serve worm with Chipotle crema or ranch.

The food brain says it'll work and be delicious... but I dont have the meabs or opportunity to test at this time. If you do it let me know.

A food brain thought...

Combining the quiche and the Chicago Deep Dish... in theory, we could have a magnificent brunch idea. Consider using both A thin layer of a cheesy mashed potato spread on the inside of a Parmasaen coated greased springform pan, and a layer of frozen shredded potatoes on the bottom. Then a layer of breakfast sausage, then shredded cheese... a layer of crisp bacon, and then eggs and more cheese. Top it with more shredded potatoes and then tomatoes, spinach, onion, and peppers... a final layer of cheese and eggs.

This all seasoned literally and baked likely foe about an hour at 375° until the sausage is cooked andcthe eggs are set. (You could likely do the cooking i. 2 stages to partially cook the sausage before adding the additional layers). Allow to sit for 10 min and release from pan slice and serve...

I might do this with toasted brushetta or garlic toast... just an idea and perhaps an experiment for another day.

Happy Thanksgiving folks... I had an Idea for your leftovers (if you have the ingredients) that's a little different. The Holiday Monte:

Turkey, Ham, and Mac and Cheese sandwiched between slices of savory Dressing/Stuffing, dredge and then "breaded" with crushed French fried onions and then pan fried Serve with a cranberry dipping sauce.

You could also add greens into the mix... this strikes me as a very southern table leftovers though.

In thr mean time... did yall know theres a YouTube page? you should totally check it out... I'll be doing video stuff there, and eventually I'll figure it out!

Mad Food Science Brain Alert:

So I had an Idea... a terrible, horrible, wonderful Idea for a party food. I would say a dinner, but it's definitely a party food idea: The BLT Patty Melt Lasagna.

Bottom layer: sourdough, gruyere, and onion jam grilled cheese placed in a butter greased pan

Second: ricotta and egg mixture with seasoned fried 80/20 ground beef topped with fresh tomato/basil 'relish.

Third: Repeat grilled cheese layer perpendicularly and press down to compress.

Fourth: replace ground beef with crispy Bacon or guanciale lardons (optional add grated Parmigiano Reggiano)

Add final layer of Grilled cheese sandwiches (rotate again and press) and top with slices of tomato, mozzarella cheese, and drizzle with balsamic.

Heat (covered) at 375° for 25min, then (uncovered) for 5 min to brown/crust the cheese.

Let rest 5 min to set up, slice, and serve

Yeah... my brain is an odd place

Let's call this Proof of Concept experiments... I present NJ Musubi. Classic Musubi is a Hawaiian dish made with Spam... basically it's Spam sushi. This extrapolate toasts the rice and seasons with everything bagel seasoning vs Furikake, mixes egg with the rice and bakes it like a Frittata, then tops it with cheese and meat (in this case sausage and ham... but in the final it will be TH/PR).

Giving the classic TEC on a roll/bagel a bit of a twist.

Part 2 of PoC experiments is the Scotched Potato... this will eventually be a DEVILED Scotch Potato being topped with Deviled egg and a bacon crumble.

Small Yukon gold/Red potatoes are parboiled in salted water an then set aside to cool. They are then sliced in half (for the experiment I did halved and whole), wrapped in sausage, and dredge in egg and panko before being fried.

Only misstep made? I needed to season the Potatoes again before wrapping... with the deviled egg and bacon these will be perfect.

And my Mad food science mind is at it again...

I know some of you out there have watched Shokugeki No Soma (Food Wars). In one episode he makes a breakfast Risotto with apples and bacon... and this got me thinking.

If I used sausage and stock... and heavy cream... and lots of black pepper... could I make a "Biscuits and Gravy" Risotto? Could I swap the Sausage with country ham, and the stock for coffee... then season and serve with eggs for a Red Eye Gravy Risotto?

Why is my mind such an odd place???

And now a take on the Flyover state favorite: Hot Dish... in this case a Chili Cheese Dog Hot Dish because I love them.

You ever have a true epiphany moment? Tesla described it as a hammer that painlessly strikes you between the eyes...

A number of years ago, I "Turned a deviled egg into a turducken" per the Lady. I did this by putting a deviled Scotched egg into a bacon wrapped baked potato and deep frying it all... I called them Xenomorph eggs (pics can be found on the Saucey Gent page). While it was a successful experiment, it was... difficult. Fitting a Scotched Egg inside a baked potato requires precisely the right sized potatoes to fit said eggs, and that has bothered me... but today I (excuse the pun) cracked it. DEVILED EGG SALAD.

By replacing the hard boiled Deviled Egg, and instead turning the whole egg into the deviled egg filling... I now use the potato like the white of the egg and fill IT, then wrap in sausage, dredge and bread... then bacon wrap.

Eureka!
