👉 Delicata Ricotta Gnocchi — Toasted Walnut — Caramelized Fig — Nutmeg Dust
Had some leftover ricotta and figs hanging around, so I did what any logical person would do 🤷🏻♂️ 😉
🔥RECIPE🔥
1. Mash together 200g of ricotta and a couple pieces of roasted delicata squash. Add in 1/2 cup 00 flour, adding more as needed until a soft & fluffy dough forms. Let rest 30 min.
2. Roll out to ~1/2 inch and cut your tocchi however you’d like, dusting with flour as needed
3. For the sauce, chop up ripe figs and cook til soft in EVOO with a dash of balsamic and honey. Add in some toasted walnuts
4. Drop your gnocchi until they float, then transfer to figs with some pasta water. Toss 2-3 min
5. Finish with some fresh grated nutmeg and more squash 🕺🏻🕺🏻🕺🏻
