👉 Delicata Ricotta Gnocchi — Toasted Walnut — Caramelized Fig — Nutmeg Dust
Had some leftover ricotta and figs hanging around, so I did what any logical person would do 🤷🏻‍♂️ 😉
🔥RECIPE🔥
1. Mash together 200g of ricotta and a couple pieces of roasted delicata squash. Add in 1/2 cup 00 flour, adding more as needed until a soft & fluffy dough forms. Let rest 30 min.
2. Roll out to ~1/2 inch and cut your tocchi however you’d like, dusting with flour as needed
3. For the sauce, chop up ripe figs and cook til soft in EVOO with a dash of balsamic and honey. Add in some toasted walnuts
4. Drop your gnocchi until they float, then transfer to figs with some pasta water. Toss 2-3 min
5. Finish with some fresh grated nutmeg and more squash 🕺🏻🕺🏻🕺🏻

Not traditional, but certainly Roman— took advantage of artichoke (carciofi) season and swapped out the guanciale🔥
🤌🏼RECIPE🤌🏼
1. In a pan, sauté 4 prepped and sliced artichokes cubed in EVOO until tender. Then, air fry at 375 for 12 min

2. In a bowl, whisk together 2 yolks and 1/4 egg white per person with 1/2 cup pecorino romano and 1/3 cup parmigiano reggiano, then add coursely ground black pepper
**👨🏻‍🍳 Note: use high-quality, organic eggs**

3. Cook 200g rigatoni pp and save a cup of pasta water

4. Toast some black pepper in the pan, mix in some pasta water, then add in your pasta

5. Turn off heat, pour in egg mixture and begin to stir immediately, adding more pasta water and/or pecorino as needed

6. Plate, finish with more pecorino, coarse black pepper, and crispy artichokes!

Crispy, saucy eggplant rolled up with ricotta, parmigiano reggiano, and provolone to balance it all out— good things come in 3s! 🧀🧀🧀
🔥RECIPE🔥
1. Cut your eggplant thin the long way, salt and pat dry after ~30 min. Bake on a greased pan @ 375 for 25 min
2. For your sauce, heat up some EVOO and throw in a few garlic cloves & chili flakes. Remove garlic, add in a jar passata, basil + salt, let cook.
3. Roll up your eggplant with the 3 cheeses in the middle plus a little sauce, and arrange in a Pyrex dish
4. Cover with sauce and more parmigiano cheese and bake @ 375 for another 25-30 min

🟩RECIPE🟩
1. In a baking tray, cover Roma tomatoes, basil & garlic cloves in EVOO, salt and balsamic vinegar. Roast at 400 for 45 min
2. Once cooled, blend it all up. I used an immersion blender
3. Transfer to a sauté pan and put over medium heat, add in fresh mozzarella and stir til its nice and cheesy
4. Add your Al dente pasta and let it cook in the sauce for a bit, I used the spinach 🔥🔥
5. Finish with a little caprese on top if you’re trying to impress. If not, just smother it in more sauce

🥬Maple Miso Caramelized Leeks🥬
Flavor-overload crispyness on the bottom, while staying soft & tender on the top 🔥🤤
🧅RECIPE🧅
1. Slice your leeks so they’re about 1/2 inch, and place on a medium-hot pan to brown, 4 min
2. Combine 1 tbsp miso, 1/4 cup pure maple syrup (or honey), 1 tsp fresh grated ginger, 1 tsp sesame oil & a dash of water
3. Pour mix over the leeks until it’s all spread out, cover for 2-3 min
4. Once sauce has cooked off a bit and is sticking to the leeks, splash in some vegetable broth and cover for another 4-5 min until tender
5. Serve with scallions and sesame seeds

This chicken is a hearty, rustic Italian staple that cooks down for hours in the oven (al forno) until it’s fall off the bone tender and delicious 🤤 Perfect for La Domenica, aka Sunday’s!
🕺🏻RECIPE🕺🏻
1. In a dutch oven, sear seasoned bone-in chicken thighs/legs until golden, remove from pot
2. Add in onions, carrots, celery and some EVOO and sauté until soft. Add in garlic chopped with rosemary
3. Once fragrant, splash in some red wine and let it cook off a bit. Add in 15 oz jar passata
4. Add your chicken back in along with 1/2 cup stock and a can of chickpeas, cover and cook in 375F oven for 2-3 hours
5. For potatoes, chop and add to Dutch oven, or roast them separately with EVOO, garlic & rosemary ( only need about 45-60min)

Nush Foods]] pancake mix is actually sooo good 🔥 🤤 I’m not one to usually use mixes, but this one stands out: high-quality Ingredients, zero sugar (!), no fillers, and tastes amazing 🙌 💯 💣 check them out!

💥RECIPE💥 (4-5 pancakes)
- 1 cup Nush Foods]] pancake mix
- 1 cup cereal milk (soak Cinnamon Toast Crunch in milk of choice for at least 30 min)
- Dash of cinnamon
- 1 tbsp coconut oil, melted
- optional, add protein powder
Topping:
- 1/2 scoop vanilla powder + almond milk til desired consistency
- top with Cinnamon Toast Crunch

Optional— I folded in 2 whipped egg whites to give some serious fluffage

🍝Pasta with Clam Sauce 🍝
An Italian-American certified classic and favorite of Nonno’s everywhere!! 🇮🇹 🇺🇸 🔥
This is perfect for Fridays, or any day for that matter! 🙏🏼
Who else grew up eating this?? 🤔
While the clams do come from a can, that’s all part of the dish’s legacy! Plus, I’ll share a few tricks to level up this classic below ⬇️ 😎👌🏼
🥫RECIPE🥫
1. Sauté a bunch of chopped garlic, chili pepper, and a couple of mashed anchovy fillets in EVOO until fragrant, then add in your can of clams with juice, cook 5 min
2. Splash in a dry white wine and let it cook down a bit, then add in juice of a lemon to your preference
3. Add in molto al dente spaghetti (take it out before al dente!) to finish cooking in your sauce, add in some pasta water too— 4-5 minutes in water, then 2-3 minutes in sauce
4. Finish off with fresh breadcrumbs, lemon zest, & a bunch of parsley 🔥🔥🔥

🍝RECIPE🍝
1. Cover a pan in EVOO on med-high heat, add in a clove of garlic and 1 small calabrian chili for 5-6 min. Remove garlic and chili
2. Dice a medium eggplant into 1/2 inch cubes and salt. Pat dry and add to heated EVOO. Fry until crispy golden brown
3. Turn heat to medium low and add in ~cup puréed San Marzano tomatoes, cook til bubbly
4. Add in some fresh basil and a handful of ricotta salata
5. Add in Al dente pasta (I used sedanini 🔥). Plate with freshly grated ricotta salata e basta! 🕺🏻🕺🏻🕺🏻

Angel hair and shrimp is a match made in heaven, simple as that. 💯
🤩RECIPE🤩 (For 2-3)
1. Peel ~20 shrimp and boil shells for 2 hrs with 4 cups water and some shallots to make broth
2. In a pan, sauté 2 cloves garlic and 1+1/2 shallots in EVOO with some red chili until fragrant
3. Add in your shrimp and cook until pink, then splash in some Prosecco
4. To a blender, add 1/4 cup EVOO, the other half of the shallot, 1/2 cup broth, 2 roasted Roma tomatoes, 4-5 cooked shrimp, and a dash of cream (optional) to make crema di scampi
5. Add pasta cooked in the seafood broth to the pan and toss with shrimp
6. Add in your crema di scampi, broth as needed, and fresh parsley, toss. Finish with chili flakes 🦐✨🦐✨🦐

📝RECIPE📝
Dry ingredients:
- 1 cup oat flour
- 2 tbsp cocoa powder
- 1 scoop chocolate protein powder — (s/o vegan chocolate)
- 1 tsp baking powder
Wet Ingredients:
- 1 cup almond milk
- 1 tbsp peppermint extract
- 1 tsp pure vanilla
- 1/2 mashed banana (optional)
Chocolate Topping:
- 1 tbsp coconut yogurt
- 1 tbsp cocoa powder
- 1 tbsp melted dark chocolate
- dash of mint extract

1. Mix all of your dry ingredients together, then add your wet ingredients and stir until just incorporated
2. Add in 2 crushed up thin mints and I added in a handful of chocolate cereal, stir into batter.
3. Pour onto skillet and flip once bubbles appear
4. Finish with chocolate sauce topping, thin mints, Catalina Crunch, and green m&ms cuz it looks nice ✅✅✅
