We have beef from our dairy steer we butchered in March and just picked up two hogs from the butcher today.

Our beef was raised on organic (not certified) pasture and then finished on regular cracked corn with free access to pasture. He never needed antibiotics, we don’t use hormone implants, and he only received dewormer just prior to starting on grain. As a dairy steer his cuts are smaller and leaner than what folks are used to in the store. For instance, a pack of NY Strips is 2 to a pack and weigh 8 ounces each. This meat is also extremely tender and very flavorful. I was able to cut a London Broil with a fork. We are low on steak cuts, but we still have about 50 pounds of ground beef along with various roast cuts.

Our hogs were raised out in standard feed plus bread, fruit, and vegetable scraps from our kitchen. They were dewormed only once out of precaution. We have 70 pounds of medium spice breakfast sausage, pork chops, full sides of ribs, full sides of pork bellies, Boston butts, ham roasts, cubed steaks, and several packs of bones.

These are not for retail sale as they aren’t USDA inspected, but can be sold in bulk packs as they were butchered by Johnston’s Meat Market. Bulk packs of beef will be $6/lb due to not having much steak left. Bulk packs of pork are $3.25/lb.
