The Bianco Toscano is the portrait of the two white grape varieties most representative of Tuscany, such as Trebbiano Toscano and Malvasia White. The grapes are harvested at their proper ripening period, subject to a careful vinification, with mod- ern technologies excluding contact with oxygen at all stages of winemaking. This allows us to obtain and preserve the original characteristics of the two varieties.

The wine has a straw yellow color with greenish reflections. The scent is very sweet and fruity, taste emerges note of acidity and freshness typical of the grape varieties of origin. It goes well with appetizers and light dishes, ideal as an aperitif.

Introducing the Chianti Governo DOCG: A Symphony of Sangiovese and Merlot

Embark on a sensory journey with Chianti Governo DOCG, where tradition meets innovation in the heart of Tuscany. Crafted from a harmonious blend of Sangiovese and Merlot grapes, this wine tantalizes the palate with its rich aroma reminiscent of ripe cherries and succulent raspberries.

Upon the first sip, Chianti Governo reveals its exquisite balance, with flavors of luscious red fruits dancing gracefully on the tongue. Its velvety texture, caressed by silky soft tannins, promises a luxurious drinking experience.

But what sets Chianti Governo apart is its meticulous crafting technique. Here, tradition meets ingenuity as a batch of carefully harvested grapes is set aside, allowed to partially dry under controlled conditions of 15°C and 75% humidity. This process concentrates the flavors, infusing the wine with a depth and complexity that captivates the senses.

As fermentation progresses, and if the main batch shows signs of slowing or nearing completion, the half-dried grapes are introduced to the must, providing a fresh source of sugar to invigorate the yeast cells. The result? A wine with a higher level of residual sugar, ranging from 15 to 18g/l, adding a subtle sweetness that enhances its overall character.

Chianti Governo DOCG is more than just a wine; it’s a testament to the passion and craftsmanship of the winemakers at Val Virginio. Ideal for pairing with hearty beef dishes, flavorful pasta, or a selection of artisan cheeses, it promises to elevate any dining experience.
