This is genuinely one of my favorite cheeses we carry, full stop. Jake’s Aged Gouda comes from a one-of-a-kind farmhouse operation run by an Amish couple in Deansboro, NY — and instead of the usual wax coat, they rub the wheels in cream as they age, which lets the cheese actually develop instead of sealing it off. The result is decadent in a way most Goudas aren’t.

Think Kerrygold, caramel, and Cheez-Its had the best-tasting baby imaginable.

Am I underselling how goud(a) this is? Probably. Come try it yourself.

This particular wheel came to us thanks to the fabulous Caroline Hesse (C. Hesse Cheese ) — a one-woman powerhouse carrying on the tradition of Anne Saxelby.

This is Whaledale — a delightful cetacean spin on the classic British Wensleydale, or what Wallace & Gromit always hoped the moon was made of. It comes to us from the wonderful folks at Mystic Cheese, where Brian Civitello has spent years reviving milled-curd cheeses — a painstaking style most cheesemakers have long since abandoned for faster methods. Couldn’t be more excited to welcome back the incredible work of Melanie and Tyler Webb of Melanie and Tyler Webb, with one of our favorite farmstead cheeses: Swallow Tail Tomme. That beautiful color comes from very happy, grass-fed Jersey cows, and it tastes like basking in a meadow amidst the Green Mountains on a spectacular summer day.

It’s Christine Clark’s favorite cheese — and that’s a commendation we don’t take lightly.

Today we say goodbye to one of our favorite coworkers, and our favorite head cheesemonger, Haley. She’s moving out west to see if Lake Michigan is really all that great.

We can’t make that decision for her, but we do know that we will miss her dearly, and not just for her beautiful work behind the cheese counter and on countless cheese boards.

Haley has been a true anchor here, an incredible colleague, and has a dynamite sense of humor.

We may not all share her passion for K-Pop, or have as deep an appreciation for board games of all shapes and sizes, but we do know wherever she ends up will be a better place just because she’s there.

Thanks, haley ⭐️, for sharing your passion in cheese with us for all of these years.

A change worth knowing about: starting this week, we’re closing on Sundays.
First time in this shop’s history — not because we want to, but because we’d rather give you six good days than seven thin ones. We’re short-staffed right now and building back up. Sundays return when we can do them right again, not a day sooner.
