Happy Holiday Weekend, Morningsiders!
Hard to be unhappy about this much-needed rain but it does put a damper on your cookout. Bring the joy back with a LOT of herbs. Here are some ideas:
An Allison Roman-style herby salad: A hell of a lot of herbs (dill mandatory, oregano, thyme, cilantro, tarragon encouraged). Like 50/50 greens to herbs.
With grilled meats, the charcoal can overwhelm the herbs. So chop fresh herbs into the sauce! We love chimichurri-type recipes - just chop tons of herbs - but don't limit yourself to parsley. Try mint, marjoram, and lovage on top of the usual suspects.
BBQing a whole fish like trout or snapper is intimidating - but it's easy! Fill the inside with Thai Basil and Vietnamese Coriander along with lemon, little chopped peppers, and chives. The fish will protect and steam the herbs inside. Or go more traditional with oregano and dill.
Finally, if you cancelled your bbq and decided to relax instead, how about a nice cup of tea from fresh Chamomile? :)
We find herbs are sweeter in the Spring - in a month, your thyme and oregano will become more bitter. So now is the time to go NUTS.
