From the University of New Hampshire to our smokehouse to your table. 🐟🔥🍴

Just got something really cool in: fresh, beautiful steelhead trout from the University of New Hampshire UNH Marine School (SMSOE) . Through UNH’s work in sustainable aquaculture, they’re helping explore new ways to raise high-quality seafood right here in New England — and we’re lucky enough to be able to smoke it for them. 🔥

Here’s a behind-the-scenes look as this beautiful trout is portioned and prepped for the smoker. And a special thanks to our neighbors here on the Pier Red’s Best for doing such a great job cutting and pin-boning it for us to process.
