Stuffed Pepper Casserole
Ingredients:
- 2 tablespoons olive oil
- 1 ½ pounds lean ground beef
- 1 yellow onion, diced
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 3 small cloves garlic, minced
- 1 teaspoon Italian seasoning or Cajun seasoning
- 2 teaspoons Worcestershire sauce
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 14 ounces canned diced tomatoes
- 1 cup long grain white rice
- 1 ½ cups beef broth
- 1 ½ cups shredded cheddar, mozzarella, or a mix
- Parsley for garnish
Directions:
1. Preheat the oven to 350°F (180°C). In a skillet over medium-high heat, add olive oil and ground beef. Cook until the beef is no longer pink, breaking it up with a spatula. Drain excess fat.
2. Add the diced onion and bell peppers to the skillet. Cook for 2-3 minutes.
