Zucchini-Chickpea Veggie Burgers with Tahini Sauce (makes 4 patties).
Ingredients Burgers:
1 can (15 oz) chickpeas, drained
1 large zucchini, grated & squeezed very dry
½ cup breadcrumbs
2 garlic cloves, minced
1 tsp cumin
½ tsp salt & pepper
1–2 tbsp tahini or oil
Optional: handful chopped parsley
Tahini Sauce:
¼ cup tahini
2 tbsp lemon juice
1–3 tbsp water
½ tsp garlic (minced)
Salt & pepper to taste
To serve: buns, arugula, cucumber slices
Steps
Mash chickpeas. Mix in squeezed zucchini, breadcrumbs, garlic, spices, tahini → form 4 patties. Chill 15–20 min.
Whisk sauce ingredients until creamy (add water gradually).
Cook patties: pan-fry in oil 4–5 min/side until golden, or bake at 400°F for 20–25 min (flip halfway).
Assemble: bun + sauce + arugula + patty + more sauce + cucumber slices.

A quick and refreshing salad packed with protein and flavor!

Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced (any color)
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Feta cheese (optional)

Preparation Steps:
1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
