- 6 cups grated carrots
- 1 cup brown sugar
- 1 cup raisins
- 4 eggs
- 1 1/2 cups white sugar
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- Optional: 1 cup chopped walnuts or pecans
✨Instructions
1. Preheat oven to 350°F and grease two 9-inch round pans.
2. In a bowl, mix grated carrots with brown sugar and let sit 10 minutes.
3. Add raisins, eggs, white sugar, oil, and vanilla. Mix well.
4. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
5. Combine wet and dry ingredients. Fold in nuts if using.
6. Pour batter evenly into prepared pans.
7. Bake for 35–40 minutes or until a toothpick comes out clean.
8. Cool completely before frosting with cream cheese icing.
