🥩🍖 Ultimate BBQ Beef Short Ribs with Creamy Mashed Potatoes, Mac & Cheese & Green Beans

Ingredients
For the BBQ Beef Short Ribs
🍖 4 large beef short ribs
🫒 2 tbsp olive oil
🧂 1½ tsp salt
⚫ 1 tsp black pepper
🧄 1 tsp garlic powder
🧅 1 tsp onion powder
🌶️ 1 tsp smoked paprika
🍯 2 tbsp honey
🍅 1 cup (240 ml) BBQ sauce
🥣 ½ cup (120 ml) beef broth
For the Creamy Mashed Potatoes
🥔 2 lbs (900 g) Yukon Gold potatoes, peeled
🧈 4 tbsp butter
🥛 ½ cup (120 ml) warm milk
🧀 ½ cup (50 g) shredded cheddar cheese
🧂 1 tsp salt
⚫ ½ tsp black pepper
For the Mac & Cheese
🍝 2 cups elbow macaroni
🧈 2 tbsp butter
🌾 2 tbsp flour
🥛 1½ cups (360 ml) milk
🧀 1½ cups (150 g) sharp cheddar cheese
🧂 ¼ tsp salt
⚫ ¼ tsp black pepper
For the Green Beans
🫛 4 cups green beans, trimmed
🧈 1 tbsp butter
🧄 1 garlic clove, minced
🧂 ¼ tsp salt
⚫ ¼ tsp black pepper
Instructions
1. Prepare the Short Ribs
Preheat oven to 325°F (165°C).
Pat the short ribs dry and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
Heat olive oil in a Dutch oven or oven-safe pot over medium-high heat. Sear the ribs for 2–3 minutes per side until deeply browned.
2. Slow-Braise the Ribs
Mix BBQ sauce, honey, and beef broth. Pour around the ribs.
Cover tightly and bake for 2½–3 hours, until the meat is fork-tender and nearly falling off the bone.
Remove the lid during the last 20 minutes and spoon sauce over the ribs to create a glossy finish.
3. Make the Mashed Potatoes
Boil potatoes in salted water for 15–20 minutes until fork-tender.
Drain and mash with butter, warm milk, cheddar cheese, salt, and pepper until smooth and creamy.
4. Prepare the Mac & Cheese
Cook macaroni according to package directions.
Melt butter in a saucepan and whisk in flour for 1 minute.
Slowly add milk and cook until slightly thickened.
Stir in cheddar cheese until melted, then fold in the macaroni.
5. Cook the Green Beans
Steam green beans for 4–5 minutes until tender-crisp.
Toss with butter, garlic, salt, and pepper.
6. Assemble
Plate the BBQ short ribs alongside the mashed potatoes, mac and cheese, and green beans.
Spoon extra BBQ sauce from the pan over the ribs and garnish with chopped parsley.
Chef's Notes & Variations
Use bone-in beef short ribs for the richest flavor and tenderness.
Add a splash of Worcestershire sauce to the braising liquid for deeper savory notes.
For smokier ribs, finish under the broiler for 3–4 minutes.
Monterey Jack can replace part of the cheddar in the mac and cheese.
