🍽️ Mediterranean-Inspired Lemon Herb Chicken with Chickpea Salad
🐔 Main: Lemon Herb Grilled Chicken
Ingredients:
4 boneless, skinless chicken breasts
3 tbsp olive oil
Juice of 1 lemon
Zest of 1 lemon
3 garlic cloves, minced
1 tbsp chopped fresh oregano (or 1 tsp dried)
1 tbsp chopped fresh parsley
1 tsp dried thyme
Salt & freshly ground black pepper
Optional: pinch of red pepper flakes
Instructions:
Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice and zest, garlic, herbs, salt, pepper, and red pepper flakes. Add chicken breasts, turning to coat. Cover and refrigerate for at least 30 minutes (up to 4 hours).
Grill or Pan-Sear: Heat a grill or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side or until internal temp reaches 165°F (75°C).
Rest & Slice: Let rest 5 minutes, then slice.
🥗 Side: Mediterranean Chickpea Salad
Ingredients:
1 can chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, finely chopped
1/4 cup Kalamata olives, pitted and halved
1/4 cup crumbled feta cheese
2 tbsp chopped fresh parsley
Optional: chopped mint or basil
Dressing:
2 tbsp olive oil
1 tbsp red wine vinegar
Juice of 1/2 lemon
1 tsp Dijon mustard
1/2 tsp dried oregano
Salt & pepper to taste
Instructions:
In a bowl, mix chickpeas, tomatoes, cucumber, onion, olives, and feta.
In a small jar, shake together dressing ingredients until emulsified.
Pour over salad, toss, and top with parsley and optional herbs.
🍞 Optional Add-Ons
Serve with warm pita or crusty sourdough.
Add tzatziki or hummus on the side for dipping.
Pair with a glass of chilled white wine or sparkling water with lemon.
