🍽️ Mediterranean-Inspired Lemon Herb Chicken with Chickpea Salad

🐔 Main: Lemon Herb Grilled Chicken

Ingredients:
4 boneless, skinless chicken breasts

3 tbsp olive oil

Juice of 1 lemon

Zest of 1 lemon

3 garlic cloves, minced

1 tbsp chopped fresh oregano (or 1 tsp dried)

1 tbsp chopped fresh parsley

1 tsp dried thyme

Salt & freshly ground black pepper

Optional: pinch of red pepper flakes

Instructions:
Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice and zest, garlic, herbs, salt, pepper, and red pepper flakes. Add chicken breasts, turning to coat. Cover and refrigerate for at least 30 minutes (up to 4 hours).

Grill or Pan-Sear: Heat a grill or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side or until internal temp reaches 165°F (75°C).

Rest & Slice: Let rest 5 minutes, then slice.

🥗 Side: Mediterranean Chickpea Salad
Ingredients:
1 can chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/4 cup Kalamata olives, pitted and halved

1/4 cup crumbled feta cheese

2 tbsp chopped fresh parsley

Optional: chopped mint or basil

Dressing:
2 tbsp olive oil

1 tbsp red wine vinegar

Juice of 1/2 lemon

1 tsp Dijon mustard

1/2 tsp dried oregano

Salt & pepper to taste

Instructions:
In a bowl, mix chickpeas, tomatoes, cucumber, onion, olives, and feta.

In a small jar, shake together dressing ingredients until emulsified.

Pour over salad, toss, and top with parsley and optional herbs.

🍞 Optional Add-Ons
Serve with warm pita or crusty sourdough.

Add tzatziki or hummus on the side for dipping.

Pair with a glass of chilled white wine or sparkling water with lemon.

🍋 Mediterranean Chicken Skillet
Prep + Cook Time: 30 minutes
Serves: 2–3

🥘 Ingredients:
2 chicken breasts, cut into chunks

1 tbsp olive oil

2 cloves garlic, minced

1/2 red onion, sliced

1 red bell pepper, sliced

1 zucchini, sliced

1/2 cup cherry tomatoes, halved

1/4 cup Kalamata olives, pitted and halved

1/2 tsp dried oregano

1/2 tsp paprika

Juice of 1/2 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: crumbled feta for topping

👩‍🍳 Instructions:
Heat olive oil in a large skillet over medium heat.

Add chicken pieces, season with salt, pepper, paprika, and oregano. Cook for about 6–8 minutes until browned and cooked through. Remove and set aside.

In the same skillet, add garlic, onion, and bell pepper. Sauté for 3 minutes.

Add zucchini, cherry tomatoes, and olives. Cook for another 4–5 minutes until slightly tender.

Return chicken to skillet. Drizzle with lemon juice and stir everything together.

Cook for another 2–3 minutes. Taste and adjust seasoning.

Top with fresh parsley and optional crumbled feta.

Serve with brown rice, quinoa, couscous, or warm whole-grain pita bread.

Ingredients:
● 2 large eggs
● 1/4 cup chopped spinach
● 1/4 cup chopped tomatoes
● 1 tbsp diced red onion
● 1 tbsp crumbled feta cheese
● 1 tsp olive oil
● Salt and pepper to taste

Instructions:

Heat olive oil in a skillet over medium heat.
Sauté onion, tomato, and spinach for 2 minutes.
Beat the eggs in a bowl and pour into the pan.
Cook until the eggs set, then sprinkle with feta.

Fold and serve warm.

Best Greek Salad

Ingredients

1 cucumber, thinly sliced into half-moons
1/2 red onion, thinly sliced
1 pt. grape or cherry tomatoes, halved
1 cup halved Kalamata olives
6 oz. feta, cut into 1/2" cubes
2 Tbsp. red wine vinegar
Juice of 1/2 lemon
1 tsp. dried oregano
Kosher salt
Freshly ground black pepper
1/4 cup extra-virgin olive oil

Directions
Step 1
In a large bowl, toss cucumber, onion, tomatoes, and olives. Gently fold in feta.
Step 2
In a small bowl, whisk vinegar, lemon juice, and oregano until combined; season with salt and pepper. Slowly stream in oil, whisking until dressing is smooth and emulsified.
Step 3
Drizzle dressing over salad and toss again to combine.
