I am Susan Pon-Biscoe, founder of The Happy Pickle Company of Boulder Colorado. I am a Chinese immigrant, born in the West Indies and grew up in Brooklyn, New York. My childhood was immersed in complex and rich flavors; pickled fish, kimchi, and those amazing dill pickles plucked from a big barrel at local delis. The half-sour pickles, like little taste adventures, were eaten immediately without anything else. They were juicy, crispy, tasted slightly-sour, with hints of garlic and finished on my tongue with umami saltiness.
Fast forward to the present and it is to my great delight to learn that these foods, if properly prepared, are some of the most nutritious foods known to people. Fermented foods include probiotics, bacteria that we rely on and are beneficial for a healthy gut. Sourdough, yogurt and lacto-fermented (real) pickles all share trillions of probiotics as an important part of their nutrition, taste and production process. Our gut and our gut microbes love these foods, eating them every day makes us healthier and happier.
They’re also delicious, and that’s where I’m the most proud. While respectful of the tradition of fermenting, we also have modern, internationalist sense to our pickles, making them irresistibly flavorful.
I am excited and very happy to announce that I've started The Happy Pickle Company of Boulder Colorado, a woman owned local business that seeks to put food, community and health on an equal footing to profit, and to feed delicious super foods to super people in Boulder County. I am here now, ready to prepare and deliver lacto fermented pickles and kimchi to your door!
