Product Highlight - Honey Lemon Rosemary Golden Beets
"Even though we make 4 different kinds of beets, I am not a beet lover. I, like many people, think they taste like dirt. However, I wanted to find a way to eat beets for all of the wonderful health benefits they provide. You know like the high nitrate content for heart and brain health or the antioxidant and anti-inflammation benefits their rich colors provide. Anyway, back in 2020, I started experimenting with different brines and various colors and varieties of beets. We already had the Maple Ginger Pickled Beets made with red beets, so I decided to focus on golden beets since they are readily available throughout the year. I loved the idea of using honey instead of sugar, so we opted to use a local Colorado honey for our product (Bjorn’s Colorado Honey) and added rosemary for the great flavor profile and additional anti-inflammatory and digestive health benefits. The lemon and onion were added for more flavor and depth of color. Plus, they just make the jar pretty. After lots of trial rounds, I came up with our Honey Lemon Rosemary Golden Beets. Quite a mouth full I know, but I couldn’t find a better name. And, I do love to find fun names for our products. Finally, I found a pickled beet that I could eat and actually enjoy. It appears as though others enjoy it too. We won the Good Food Award in the pickles category for this product in 2024.
You can find our Honey Lemon Rosemary Golden Beets at your favorite farmer’s market or in several retailers including all of Bjorn’s Colorado Honey store locations (including the Airport stores), Lucky’s in Boulder, Cheese Importers, and several other retailers throughout the country including Alaska. Needless to say, I am extremely proud of these beets and hope you will try a jar even if you don’t love beets. You might just be pleasantly surprised.
