*Garden produce, can We originally started out raising our own Rainbow Trout which we offered fresh and smoked, tragically in 2013 we lost all 5500 fingerlings for th

e coming year due to an electrical outage. As our different varieties of smoked fish and pickled fish were well received we decided to concentrate on these products and purchased fish from our local commercial fisherman. Over the years we have concentrated on adding unique products - including our own roasted organic artisan coffees and iced teas made from wild cranberries and wild blueberries. We also have organic certified Shiitake mushrooms, available fresh, and dehydrated whole and powered. And lastly we added roasted Cashews and Almonds in an assortment of flavors. In October of 2021 we added signage at the Homestead and have Monday-Friday, 8-5 hours for you to stop in and pickup fresh roasted coffees and nuts. When available we will have shiitake mushrooms products, jams, jellies, specialty cookies and other goodies. Absolutely gorgeous harvest of Shiitake mushrooms, counted close to 700!!!

$10 lb for mushrooms that have been trimmed of stems.

Great time to pick up roasted Organic coffees, Lighty salted Almonds and Cashews. We also have dehydrated mushroom products.

The new coffees are ordered and on the way to the Homestead!

Believe it or not but this is always such 'hard work' deciding on new beans. Getting samples in, getting them roasted, and doing our taste tests only to have "BEANS SOLD OUT" is so frustrating!

But here are the next ORGANIC BEANS to be featured at Homestead Ponds. The flavor notes are provided by Cafe Imports and are what we look at for ordering beans to sample.

Fair Trade Organic DR Congo
Nutmeg with mellow fresh coffee cherry flavors. Winey
acidity and mild candy-like flavors.

Organic Ethiopian
Cocoa and clove with mild cooked cascara flavors.
Tart acidity and mild sweetness.

Organic Guatemala
Almond with mellow pecan flavors. Complex acidity and
a smooth mouthfeel.

We FINALLY have fresh log produced shiitake mushrooms available at the Homestead. Have picked and trimmed 7 lbs with more ready by end the end of the day or in the morning.

Trimmed caps, heavy stems removed.
$ 1.00 per ounce
$14.00 per pound

Someone recently said "You just sell someone else's roasted coffees and repack them don't you?" NO! As most of you know, we purchase green coffee beans and do the roasting ourselves.

Something that IS DIFFERENT about our roasted coffee is that we do pan roasting rather than drum roasting. With drum roasted coffee the beans are all roasted to the same 'color' - dark, medium, light roasts.

Pan roasting give just the opposite result, a variety of bean 'colors' and more importantly a wonderful depth of flavor.

And one of the best reasons to get our coffees is that we have a
'roasted on' date. We start marking down our bags of coffee when they are two weeks old! Although our beans are packaged in air tight bags, we want everyone to have the best of coffees!

Stop by a pick up a bag or two or three! There is always bags available, along with our fresh roasted cashews and almonds.

Oh, if you could only have Smell-o-vision you would be in fresh roasted coffee heaven!

Scott just finished roasting all three of our Fair Trade Organic coffees from BOLIVIA, GUATEMALA and NICARAGUA.

And he also did a double batch of roasted lightly salted Cashews.

While we still have some Organic Colombian, Tanzanian Peaberry and Vietnam coffee beans left - they are selling well.

IT'S TIME TO SAMPLE NEW BEANS!

I purposely selected all Organic and Fair Trade Organic beans. Getting back to our coffee roots.

We will be roasting up beans from Colombia, Ethiopia, Guatemala, Peru and Rwanda.

We have several bags of FAIR TRADE ORGANIC COLOMBIAN, ORGANIC ETHIOPIAN, and COSTA RICA COMMUNITY REGIONAL SELECT available to pick up.

Fresh roasted last Friday, December 9th. $11 per one pound bag, or any 3 for $30.

Also have $20 bags that included 1 lb coffee, 1 bag each of fresh roasted almonds and cashews.

Remember you can stop anytime M-F, 8-5. We'd love to have you stop in.

Our Story

Follow along as I post recent happenings, recipes and life at Homestead Ponds. In 2017 we started offering roasted Cashews and Almonds in an assortment of flavors. Most of our products are available June-September at the Grand Rapids MN Farmers Market, Birds of a Feather occasional shop in Bovey, MN, and by prior arrangement right here at the Homestead.
