Another Day at the NOCK!

Today we had forklift operator training: classroom safety followed by instructional guidance outside on our shared-use forklift.

Then Guac Shop prepped some Guac Prep in the prep kitchen.

Finally, Kozy’s Sodys finalized onboarding & is our newest official NOCK tenant! They are using the facility to create syrup packs for their soda to-go kits.

We take food safety extremely seriously at the NOCK. We must follow regulatory guidelines and realize our responsibility to keep the community safe through our food.

Today at the NOCK — new piston filler training with The Angry Italian.

A year ago, you’d find this company in our smallest kitchen with a 5 gal kettle, making sauce for friends and family only.

Today, The Angry Italian made 270 jars in a couple hours with our new equipment, and his sauce is in 80+ stores.

After the Specialty Food Association Fancy Food Show this year, we expect to see this brand grow even more.

Toledo's Graze Station Charcuterie Company Opens First Storefront On West Central

A Toledo catering duo has turned a search for kitchen space into a full-blown food business — and Monday they opened their first brick-and-mortar storefront on West Central Avenue.

Why it matters: Graze Station Charcuterie Company is a homegrown success story built inside the Northwest Ohio Cooperative Kitchen (NOCK) — a local resource designed to help small food businesses get off the ground.

What they sell:

— Build-your-own charcuterie boxes — think "Chipotle meets charcuterie"

— Pick your box size, pick your items, and they build it for you on the spot

— Locally sourced products with a strong emphasis on other NOCK vendors

— Also featuring salads, juices, wraps and more from local partners

How they got here:

— Co-owner Casey Lucio and her partner started as a catering business looking for commissary space

— NOCK provided kitchen space, licensing help and mentorship

— Since launching, they've obtained a wholesale license, acquired a mobile serving cart and created an event space

— They're headed to the Fancy Food Show in New York in June to expand their market reach

In Casey's own words:

— "NOCK really set us up for success. They gave us all the tools that we needed as a small business to get started — everything from licensing to kitchen space to mentorship."

— Her advice to other aspiring food entrepreneurs: "Reach out to them and start asking your questions. They will really give you the tools to make or break your business and help you succeed."
