Bald Eagle Farm Bald Eagle Farm is located on the west side of Lamoka Lake, just outside Tyrone NY. At Bald Eagle Farm we grew three different varieties of porcelain garlic.

We use natural, sustainable and regenerative practices for growing all our plants. We offer garlic, lavender, clary sage, arp rosemary and s**g bark hickory products. We use the majority of this garlic to produce an all natural garlic salt made with Himalayan pink salt. This salt is ground extra fine to pe*****te meat fibers better. nch Grey Shallots are a true shallot since they can only be propagated by from bulbs. We use the Himalayan pink salt to produce a shallot salt. We also offer a garlic/shallot blended salt, minced garlic and minced shallots. Along with these salts we have a variety of infused salts and four different rubs that use garlic and shallots as the base. We have an abundance of S**g Bark Hickory trees growing on Bald Eagle Farm. S**g bark hickory trees naturally shed their bark, so no damage is done to the tree by collecting the loose bark. The bark is clean, and boiled to make an extract tea. Organic sugar is added to the tea to make the syrup. The syrup tends to be lighter, less sweet than maple syrup. It also has a light smokey flavor to it. At Bald Eagle Farm we also grow several different varieties of lavender; Munstead, Hidcote, Grosso, Phenomenal, Provence and Sensational. This was our first year to harvest lavender. We offer sachets, dried lavender bunches and lavender for cooking. Along with the lavender we have rosemary and Clary Sage.

Our rain barrel collected approximately 90 gallons of water after a hard thunderstorm. We used our 12volt DC submersible pump to transfer it to another container that was on a pallet. We used the tractor to move this container to our field where our IBC water storage tank is located. We transfer the water from the container to the storage tank. It took us about 20 minutes for the entire process.

This is our portable solar panel. We are off grid power wise so we made this to get AC/DC power in our fields or upper barn. It’s a 100 watt panel with a 12 volt 100 AH gel battery and 2000 watt true sine wave inverter. Since we don’t use anything that draws a lot of amperage the one panel is large enough to keep the battery charged.

Garlic, Shallots, Hickory Syrup have been processed and Honey has been collected for 2022. This year we are offering various combinations of our products in a wooden caddy. The caddy in this picture is made from reclaimed chestnut and is filled with our roasted garlic salt, #1 seasoning salt, honey and hickory syrup. You may choose a combination of four products from plain garlic salt, roasted garlic salt, black garlic salt, #1 seasoning salt, 4 ounces of honey or 5 oz of hickory syrup. Each caddy includes a free sachet of our lavender buds. Price varies based on the wood the caddy is made of. Currently we offer caddies made from recycled chestnut, cherry, and eucalyptus. We will have bird's eye maple and walnut caddies available soon. Bald Eagle Farm is an all natural small "mom" and "pop" operation. We do everything ourselves so supplies are limited. As summer comes to an end things a wrapping up on the farm. We had a fantastic garlic harvest this year. We harvested six different varieties of hardneck garlic. The French shallot harvest was the best we have had, nice size shallots and lots of them. The garlic and shallots will be used to make our garlic salt, shallot salt and our blended salts. We also introduced pasture raised chickens to the farm this summer. We raised processed 50 Imperial Red chickens. Finally we added two bee hives with great success. Our elderberries did not do as well as we had hoped but it was an extremely dry summer this year.

Our lavender plants suffered winter and deer damage this winter. Yes deer damage. The winter was so harsh that deer ate the lavender plants. So our lavender is spares this year. We will have good supply of garlic and French grey shallots along with our garlic salt, shallot salt and our garlic shallot blended salt. We also have a good supply of s**g bark hickory syrup and four different rubs using our garlic and shallots as the base for them. It’s garlic scape time. If you’re interested in free garlic scapes drop us a note and we’ll tell you how to pick them up. If you are not familiar with garlic scapes the are the portion of the plant that will bear the flower. We cut them off prior to flowering to keep more energy going to the garlic bulb. They have a milder garlic flavor the the clove.
