When you buy a half or whole custom beef, 🔥FLANK STEAK🔥 is an option that you’re able to choose.

It is not a very well known cut, but if more people knew about it, I have no doubt that it would be.

This recipe is a family favorite at our house!

You start by tenderizing the meat (cutting board, layer of plastic wrap, steak on top of that, & another layer of plastic wrap) with a meat tenderizer. Make sure to flip it and do both sides.

Then I followed the recipe. Don’t let the raw garlic & shallots keep you from trying it. The hot off the grill steak resting on top slightly softens both & lessens the raw taste (I don’t like raw garlic or shallots.). The meat is laying on a bed of the other ingredients combined together.

I covered the steak on the cutting board with a loose foil tent to rest. Then slice across the grain (from side to side not end to end). Slicing with the grain will cause it to be tough.

Enjoy! I served it for supper earlier this week with grilled corn on the cob (fresh corn wrapped loosely in foil with real butter & salt) & roasted asparagus (also on the grill in a foil pan).

“Beef Lady, how much does it cost to get on your list for a custom beef?”

I only require a deposit to put you on my custom beef list-$250 for a half & $500 for a whole steer.

You’re able to pay more (so you owe less in the end) if you choose to, & I write a receipt for any payment made.

At the time you pay your deposit you will be ask to choose the month you want your steer slaughtered. Keep in mind that it takes 3-4 weeks to get the final product after slaughter.

Your final payment is due before you pick your meat up from the processor. After you are paid in full, I let the processor know you’re good to pick up your beef.

“Beef Lady, do you raise grass fed beef?”

I do not raise any beef that is grass fed/grass finished. That means that the animal has spent its entire life eating only grass/hay/forage.

Every steer that we sell has been grain fed & grain finished. The goal of grain finishing is tenderness, marbling of fat, & juicy flavorful meat.

Grass fed beef is known to be leaner overall and lacks marbling. It will also have greenish or yellow fat as opposed to the snow white fat of a grain finished animal.

While grass fed beef tends to have fewer calories, most people prefer the texture & flavor of grain finished beef.

If you’re considering buying grass fed beef, I urge you to do your research, and reach out to those who have bought it. The term “grass fed” sounds organic & healthy, but what does it matter if you don’t like the meat?

“Beef Lady, how do you figure the cost of a HALF OR WHOLE BEEF?”

The cost of each half or whole is calculated by hanging weight.

Hanging weight is taken by the processor after the hooves, hide, blood, head, etc have been removed (picture the scene from the old Rocky movie where he is training in a meat locker). The processor provides that weight to me, & he also uses it to calculate your processing fee.

The hanging weight is different for each animal, & sometimes each half of the same steer varies by a few pounds.

You still have time to get yourself some locally grown beef!

My next custom beef availability has a slaughter date of September 18. Due to dry aging, it takes 3-4 weeks to get your final product from the processor.

That’s plenty of time to enjoy some fabulous grilled beef before winter gets here.

Yes, I could probably cut corners, compromise standards, & decrease my effort a good bit.

You know what you would be getting? A mediocre product, if that.

When you buy beef from me, you’re getting a product that started long before a slaughter date was scheduled.

Through strategic planning & lots of work, we have developed our system of growing steers.

It starts with an Angus gene pool & continues through a rigorous feed program that is implemented before the calf is even weaned & continues until slaughter.

Using high quality feed each steer is grown to his fullest potential.

That doesn’t mean he is fed for 30 or 60 days. He is fed until he is finished (has a physically mature skeleton & muscle & fatty tissue) which is at least 120 days & sometimes more.

We are not a factory where we mass produce. We are a 365 day a year no matter the weather family operation where we don’t pick & choose when or if we tend to our animals.

We won’t be growing a mediocre product.

We will be growing a high quality, sought after product that you will want to tell your family & friends about.
