We’ve all cringed at hearing the term “pink slime,” but do you know what is actually means?

Pink slime is a meat by-product used as a filler in ground beef. The process by which it’s made starts with the trimmings & scraps left over when cattle are butchered. They are heated to melt the fat allowing the lean tissue & muscle to be separated from it.

The next step is a real eye opener! The lean meat paste left from the previous step is sprayed with ammonia to kill bacteria.

It is then frozen & used to blend with ground beef & fast food burgers.

You may be wondering why would there be such a thing. The answer: reduce costs.

Now you know.

You know where you won’t find pink slime? Ground beef from my farm raised, grain finished, aged beef that’s where.

The weather forecast looks like we may need to celebrate BEEF MONTH by cooking inside for a few days.

Cooking outside is my absolute favorite, but I have a few recipes I love when cooking in the house. One of those is♦️DIRTY RICE♦️. It uses the most popular beef cut of all-GROUND BEEF.

This hearty dish can be made ahead (it’s even better after sitting for awhile) & is a meal in itself. It reheats well too!

There has been lots of media talk about ⚡️GROUND BEEF⚡️ in recent years.

The possibility of fillers, binders, preservatives, & water added to store bought ground beef has made people rethink what they are feeding their families.

If you’re buying ground beef from the grocery store, educate yourself about what you’re eating.

If you’re interested in ground beef that is completely free of any additives, consider buying a half or whole beef-100% grain finished, aged beef.

I am sold out of custom beef for June, & I only have 2️⃣ halves or 1️⃣ whole beef still available for July (slaughter date July 9).

May is Beef Month & that’s reason for celebrating at my house!

This week I made a family favorite-TRI TIP ROAST. Don’t let the name mislead you. This is not a pot roast!

Since Tri-tip is not well known here in the south, I had to teach myself how to cook it a few years ago. I’m sharing my cooking method (There are lots of others!) in the comments along with a finished photo .

Custom beef is just that. The buyer is able to “customize” their entire half or whole beef anyway he/she chooses.

🥩What is DRY AGING?

In my post yesterday I mentioned DRY AGING & how it affects the flavor of beef.

Many people have heard of “aged beef” but few actually know what it means. Some may think it’s a gimmick or a phrase “beef people” use to promote their product.

Dry aging is real process that has been used for years to maximize tenderness & to produce a more intense beefy flavor of the meat.

It starts as soon as the beef is slaughtered & is hung in the cooler at the processor as a half or a whole before any cuts are made. The cooler serves as the controlled environment-low temperature, exact humidity, & consistent airflow.

During dry aging natural enzymes break down connective tissue (maximizing tenderness) & moisture evaporates to produce a richer, beefy flavor.

If you have had beef that is tough or doesn’t taste “beefy”, it’s likely that it wasn’t dry aged. Most store bought beef isn’t dry aged because the process takes too long.

When you buy a half or whole beef from me, it has been dry aged. That’s the reason the turnaround isn’t immediate. The quality you get in return is well worth it!

If you buy beef from someone else, be sure to ask about dry aging. It makes a huge difference, & you will be glad you did.

Why does homegrown beef taste different than store bought beef?

Anyone who has eaten homegrown beef knows that the flavor & often the texture is not the same as store bought beef.

There are a variety of reasons. The main one is the diet of the animal. The breed, age, & health of the animal also impacts the flavor as well as how the beef is processed.

Store bought beef often comes from a source where it is processed in a short time to meet mass demands. Homegrown beef has the option of being dry aged for days while at the processor.

Dry aging is a process that breaks down connective tissue & concentrates flavor.
It maximizes tenderness & provides a “melt in mouth” texture.
