Nothing like homemade lemonade 🍋 served with loaded tuna salad in baked flour tortilla cups.

Thanks to the hubs and my littlest man for the “help.”

My first “experiment” in the kitchen 2026
I wanted salad but did not have lettuce.

Doritos Taco pasta salad it is!
Taco meat
Egg noodles
Whole kernal corn
Black beans
Red bell pepper
Green bell pepper
Red onion
Rotel tomatoes
Feta cheese
Doritos

Dressing:
Garlic
Mayo
Sour cream
Hot sauce
Lime juice
Catalina dressing

A few additions/substitutions for next time:
Rotini pasta
Black olives -LOTS
Jalapeño peppers
Cilantro

In theory, you mix is all together, but I did leave the Doritos and feta separate. The option to add more dressing is there as well.

This was delicious!

Today is the last Saturday breakfast before school begins!
Pancakes and sausage for the guys (Dad’s request)

Turkey & Veggie omlet cups for me made with farm fresh eggs, garden black cherry tomatoes, fresh basil, red and green cayenne peppers, garlic, onions, black olives, and cheese.

They turned out real good and glad I have extras for the upcoming couple days!

You don’t have to have these for breakfast only. Treat them like a quiche and serve with a side salad. Low carb and full of protein!
