🎃 Happy National Pumpkin Day! Celebrate with a sweet and creamy pumpkin pie dip that’s perfect for fall gatherings, parties or a cozy night in. 🍂

Ingredients
1 ¾ cups heavy whipping cream
1 (3.4 oz.) box instant cheesecake pudding mix
1 cup canned pumpkin purée
2 tsp. pumpkin pie spice
½ tsp. ground cinnamon
½ tsp. vanilla extract
Pinch of salt
Apple slices, pretzels, graham crackers, gingersnap cookies, and biscoff cookies for serving

Directions
In a large mixing bowl, beat the heavy whipping cream and instant pudding mix with a hand mixer until thick and fluffy, about 2–3 minutes.
Add the pumpkin purée, pumpkin pie spice, cinnamon, vanilla, and salt. Mix until smooth and creamy.
Cover and refrigerate for 30 minutes to allow the dip to chill and thicken. Serve with apple slices, pretzels, graham crackers, gingersnap cookies, or biscoff cookies.

🔥 Smoqued Mississippi Pot Roast 🔥

Made by David Spillers of SmoQued on Main St.

⏱️ Prep Time: 15 minutes
🔥 Cook Time: 5–7 hours
🍽️ Servings: 6–8
🌡️ Smoker Temperature: 250°F

INGREDIENTS
• 3–4 lb boneless chuck roast
• 1 packet ranch dressing seasoning
• 1 packet au jus gravy mix
• 8–10 pepperoncini peppers
• ½ cup pepperoncini juice
• 1 stick (½ cup) unsalted butter
• 1–2 tbsp Heath Riles Garlic Jalapeno Rub (optional)
• 1 tbsp Worcestershire sauce (optional)

INSTRUCTIONS

1️⃣ Fire up the smoker
Preheat your smoker to 250°F using Smokey Woods charcoal and your favorite smoking wood. Cherry or oak works great with beef.

2️⃣ Season the chuck roast
Pat the chuck roast dry and season all sides with Heath Riles Garlic Jalapeno (or favorite rub) and Heath Riles Beef Rub. Let it rest for 15–20 minutes while your smoker comes up to temperature.

3️⃣ Build that smoke flavor
Place the chuck roast directly on the smoker grates. Smoke for approximately 2–3 hours, until the roast develops a nice bark and reaches an internal temperature around 160–170°F.

4️⃣ Make it Mississippi style
Transfer the roast into a foil pan or Dutch oven. Sprinkle the ranch seasoning and au jus mix over the roast. Add the pepperoncini peppers, pepperoncini juice, Worcestershire sauce, and butter cut into pieces.

5️⃣ Cover and finish cooking
Cover tightly with foil or a lid and return to the smoker at 275°F. Continue cooking for approximately 2–4 hours, until the roast is probe tender, typically around 200–205°F.

6️⃣ Shred and serve
Let the roast rest for 15–20 minutes. Shred the beef directly into the buttery, tangy juices and mix everything together.

Who doesn't love a warm, cheesy French dip sandwich? 🥪 This slow cooker French dip recipe is perfect for an easy, comforting dinner the whole family will love! 😋

Ingredients:
3 lbs rump roast
1 large yellow onion, sliced
4 cloves garlic, minced
2 ½ cups low-sodium beef broth
¼ cup low-sodium soy sauce
1 tbsp Worcestershire sauce
1 tsp honey
1 sprig fresh rosemary
1 sprig fresh thyme
1 tbsp olive oil
6 French rolls
6 slices provolone or Swiss cheese
2 tbsp butter
Salt and black pepper, to taste

Instructions:
Whisk together the beef broth, soy sauce, Worcestershire sauce, and honey. Set aside. Heat olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then sear for about 3 minutes per side until browned.

Transfer the roast to a slow cooker. In the same skillet, sauté the onion for 3 minutes, then add the garlic and cook for another 30 seconds. Pour in the broth mixture, scraping up any browned bits from the bottom of the skillet. Transfer everything to the slow cooker and add the rosemary and thyme.

Cover and cook on LOW for about 8 hours, or until the beef is fork-tender. Remove the roast and shred it with two forks. Strain the broth and return the shredded beef to the slow cooker with about ⅓ cup of the broth.

Preheat your oven to 350°F. Butter the French rolls and toast for 7–8 minutes. Add the cheese and bake for another 2 minutes until melted. Pile the shredded beef onto the buns and serve warm with the remaining broth for dipping. Enjoy!
