Beef liver might be one of the most misunderstood cuts on the farm.

Long before there were protein powders, energy drinks, and shelves full of supplements, our grandparents knew something we’ve forgotten. Some of the most nutritious food on earth wasn't found in a bottle... it came straight from the animal.

Beef liver is packed with protein, iron, Vitamin A, and B vitamins. In fact, many folks today call it "nature's multivitamin."

The classic preparation is liver and onions cooked in butter, but many families also blend small amounts into ground beef for meatloaf, chili, tacos, and burgers as an easy way to boost nutrition.

🄩 This week I’m choosing the Sirloin Tri Tip as Willie’s Cut of the Week!

I’ll be honest… we grilled one up for our family last week, and it surprised me. Tender, juicy, packed with flavor, and every bite had us reaching back for another slice. By the end of supper I was thinking, ā€œI may have made a mistake selling theseā€¦ā€ šŸ˜…šŸ”„

This cut is incredible on the grill. A little salt, pepper, garlic, cook it to medium rare, slice it thin across the grain… and you’ve got a meal that feels way fancier than the effort it takes.
Pair it with roasted potatoes, grilled vegetables, or a pile of garlic fries cooked in beef tallow and you’re eating GOOD.

The bad news? I only have ONE left in my own freezer… and after tasting it, I understand why these disappear fast.

So last Night, we had our first Uber Delivery....

A customer ordered online, received the notification that his order was ready for Porch pickup at our Homestead and he set up a pickup through Uber Connect.

Within the hour he had his beef, eggs and Pet Milk delivered to his home.

This has been part of the vision when we started, offering Old World Quality with New World Convenience.

I love living in Sussex County in this modern age!

🄩 This week I’m choosing the Flat Iron Steak as Willie’s Cut of the Week!

This one might just be the most underrated steak on the farm.

Flat Iron is known for being incredibly tender with big, rich beef flavor... all without the Ribeye price tag. It grills up beautifully, slices easy, and makes a mighty fine supper after a long day’s work. šŸŒ¾šŸ”„

Season it simple with salt, pepper, and garlic. Throw it on a hot grill, cook to medium rare, slice against the grain, and serve with roasted potatoes, garden salad, or pile those juicy slices onto a toasted sandwich roll.

It’s one of those cuts that makes folks stop halfway through dinner and say:
"Hold on... what cut is THIS?"

Perfect for weeknight meals, family cookouts, or stocking the freezer with a steak that eats above its pay grade.

Spring ball season means early mornings, packed coolers, folding chairs, and long days at the field.

Start the day with something that sticks. A hearty steak & eggs breakfast gives growing athletes and hard-working parents the protein and energy they need without the mid-morning crash.
