We’ve heard lots of love for the root beer this week. If you haven’t tried it, it’s so good and it’s made from (we have their delicious beer, too)!

Pizza of the week for this week is a BBQ pulled pork that is simple, but with a local theme! Red sauce, pulled pork from Papa K’s Rescue BBQ, red onion, our cheese blend including Redhead Creamery’s Simply Cheddar, and drizzled with locally made Rose City BBQ sauce.

It has been so fun to collaborate with so many local businesses. When you come here, you’re supporting so many small businesses and local workers!

The sourdough pizza is a labor of love, but at least it often involves beautiful sunrises and sunsets! Here is from this morning.

Did you know our pizza dough is totally naturally leavened? 100% sourdough — we’ve never added any commercial yeast. Feeding the sourdough starter, Elaine, happens every 12 hours (7am, 7pm). We make fresh dough for each pizza night with an overnight bulk fermentation for the dough and then form it into balls in the morning.

Fun fact: That longer fermentation is what *might* make our pizza easier on your stomach because the gluten gets broken down more.

Our dough ingredients are: sourdough starter, Linkert flour from , water, and salt.

It then is cooked in the brick oven at 850 degrees. It only takes about 90 seconds! That is the key to getting it to rise up quick and get that airy, chewy, crust.

The Thai pizza… peanut butter bbq sauce, pulled pork, jalapeños, green onions, pineapple and cilantro. It’s been a steady on our menu because it’s just SO good! Now made even better because the pulled pork was smoked by ! Papa K’s is using our wine for their ribs and now we’re using their meat on our pizzas!

Come have some this weekend — lots of pizzas still available for Thursday, Friday, and Saturday!

Well, that was mayyyybe a record quick sell out for a pizza night 🫢 we’re excited to see all of you regulars back and a few new faces on Saturday!

Reminder that there are only 70 pizzas a night and this week is unique because there is only one night, but starting next week there will be three pizza nights each week (Thursday - Saturday).

And, if you didn’t get a pizza, you can always just come to enjoy the wine, beer and ice cream! 🍷 🍺 🍨
