Veteran-owned and -operated, Central Texas Grassfed is a third-generation ranching family that’s been raising hearty, healthy cattle on the banks of Rocky Creek in Burnet County since 1932. We use humane practices and work in harmony with nature to provide delicious, nutritious grass-fed beef to our friends and neighbors in the Texas Hill Country. We’ve been raising cattle for decades, but in rece

nt years, we discovered that holistic grazing improves both the beef and the environment. The only way to make it work the holistic way is to sell directly to our customers -- so that’s what we’re doing. Our grass-fed beef is available in both half and whole quantities.

We started this journey in regenerative agriculture for a number of reasons. We wanted to provide local, nutritious beef for our Central Texas community.

Working with nature rather than against it, we are providing the best environment for our animals and creating a ranch that is more sustainable, more resilient.

Little did we know how quickly we would put that resilience to the test. The drought of 2022 is one for the record books, and it is challenging us in numerous ways. We are having to get creative, but planned rotational grazing, appropriate stocking rates, and careful monitoring of our forage will help us to weather this long, hot summer.

Hoping for Rain Soon!

A little flag trivia for your Fourth of July:

You may have noticed that American soldiers wear a U.S. flag on the right shoulder of their combat uniforms. But the flag is reversed, stars on the right side, stripes on the left. Is this a mistake? A backward photo?

No, it’s not a mistake. That image represents the flag moving forward as you would see it from that soldier’s right side; stars affixed to the flagstaff, stripes billowing to the rear.

That soldier and that flag are ever moving forward.
Happy Fourth from our family of veterans!

The key to raising grassfed cattle is growing enough grass to keep them healthy and happy. We do that by rotating the herd through small paddocks every few days, letting them eat the tenderest, most nutritious parts of the plants and move on. We then let our paddocks rest at least sixty days, but preferably longer so that the grass can fully recover. It takes a lot of planning and hard work, but the cattle love it. They come running when they see us coming, because they know they’re about to move to a new, green paddock.

Litter is a Good Thing! Plants have life cycles. They take root, they grow and mature, and they die. Then the dead organic matter returns to the soil to start the process over again. We call that matter “litter” or soil cover. Plentiful litter, like mulch, cools the soil, helps it retain moisture, and promotes a vibrant microbiology. We roll our big round hay bales down hills to create more litter to help turn that dead organic matter into nutrients to feed the grass, the cows, and ultimately, you.
