Local beef. That’s a 1 pound New York Strip, the bride and I will split for dinner tonight.

When I buy and cook steak I am attempting to capture steakhouse flavor and quality. We breed our cattle for beef quality and finish our beef to steakhouse quality. To us nothing less will do.

This is a stock tank that is one that traditionally would leak to empty over a period of about three weeks after filling up. One bag of bentonite clay thrown around the full tank with a horse feed scoop was enough to seal the leaks. It’s now holding water for months!
