Here's one food-safety rule worth remembering:

⏰ 2 hours.

That's generally the maximum amount of time perishable food should sit at room temperature before being refrigerated.

And if it's hotter than 90°F outside? That drops to just 1 hour.

So that platter of burgers that's been hanging out beside the pool all afternoon probably shouldn't become tomorrow's lunch. 😉

A thermometer tells you what your eyes can't.

USDA safe minimums:

🥩 Beef, pork, lamb & veal steaks/chops/roasts: 145°F + 3-minute rest
🍔 Ground beef/pork: 160°F
🍗 Poultry: 165°F

Dry brining isn't just for steak.

Chicken, pork, and even some fish can benefit from being salted BEFORE cooking.

Here's what's happening:

🧂 Salt pulls a small amount of moisture to the surface.
💧 That moisture dissolves the salt, creating its own concentrated brine.
↩️ Over time, that salty liquid is reabsorbed into the meat.

The result? Seasoning that goes beyond the surface, plus a drier exterior that browns beautifully when it hits the heat.

One important exception: don't dry-brine ground meat for burgers. Salting ground beef too early can change its texture.

Most people reach for a marinade.

Professional chefs often reach for salt.

For thick steaks, seasoning with kosher salt 1–24 hours before cooking (known as dry brining) allows the salt to pe*****te deeper into the meat while helping create a beautifully browned crust.

Marinades add flavor to the surface.

Dry brining seasons the meat itself.

Both have their place—but for a great steak, simple is often better.
