On Saturday, we had samples of blueberry pizza. I have several requests to post the recipe. Here it is!
Blueberry Pizza
2 cups flour
1 cup powdered sugar
1 cup butter
12 oz. cream cheese
1 teas. vanilla extract
3/4 cup granulated sugar
8 tbsp. Granulated sugar
2 tbsp. Corn starch
3 pints fresh blueberries
Preheat oven to 325 degrees
Crust: combine flour, powdered sugar and butter at room temperature into a dough, Evenly distribute and press dough onto a 14 inch pizza pan. Note this is like a cookie crust dough to press into pan and will form a crust when baked. Bake for 15 minutes At 325 degrees for about 15 minutes until brown around the edges. Set aside to cool.
In a saucepan combine 1 cup blueberries (mashed), 8 tbsp sugar and 2 tbsp. corn starch, cook on low heat stirring occasionally until it begins to thicken. Set aside and let cool.
Combine cream cheese (room temperature) , 1 teas. vanilla and 3/4 cup of granulated sugar. Mix until thoroughly blended.
When the crust is cool spread the cream cheese mixture evenly over the entire crust.
Spread the cooked blueberry sauce on top of the cream cheese.
Cover the entire pizza with the remaining blueberries and refrigerate for at least 1 hour before serving.
