The acorns have started falling in Extremadura, and we’re opening the season with a hands-on class.
La montanera has begun — the season, October through March, is when Iberian pigs are turned loose in the oak forests to eat nothing but “bellota” or acorns. Each animal will nearly double in weight before it’s done, and it’s that acorn fat that gives pata negra tit’s unique richness and flavor. The curing simply brings it out.
MONTANERA: A PATA NEGRA MASTER CLASS
Thursday, October 8 · 7:30pm
252 Third Avenue at Union — the Copa y Caña location.
Two hours of tapas, wine, education and a knife in your hand. You’ll learn to read a ham — where the maza gives you marbling, where the babilla gives you intensity — and get a lesson from a professional jamonero so next time you get a leg for a arty, you’ll know a bit about how to approach it and cut it yourself.
Wine and sherry pairings are just the start.
