Join us for the Hudson Valley Fermentation Festival this weekend June 15th, where you can explore a lively tastings and market filled with local producers of fermented food and beverages. From sour pickles and gooey nattō to wild mead (oh that’s us!) indulgent cheeses, chocolate and wine, discover and celebrate the diversity and gut-goodness of fermented creations!

Don’t miss the opportunity to participate in a workshop, demo, or talk, led by producers and experts in fermentation, including Jonathan White, Co-founder of Bobolink Dairy & Bakehouse; Alice Jun, Founder and Sool Maker at Hana Makgeolli; and Rich Shih, co-author of Koji Alchemy and one of the key culinary explorers of mold-based fermentation in the United States.

There will be live music all day, and we’ll be serving up wood-fired pizza, burgers and barbecue.

Next up in our staff profile series, we’re featuring the man behind the liquid magic at Enlightenment Wines: our winemaker, Harris Shper. Harris has overseen the honey wine & cider making at the winery for the past three years.

Harris made his way to New York City – just days before COVID shook the world – from Montreal, where he was entrenched in the folk and new classical music scene for a decade. While the transition from music to mead-making may not seem obvious, “mixing” is at the heart of both activities. Harris’ work in the music industry continues to inform his approach to winemaking.

“It was an easy transition to making mead from making music because I was originally working mostly as a sound engineer. The frequencies are the same in my mind. When I'm manipulating sound and searching for certain tones, it’s similar to when I'm tasting and blending ingredients. It's as if I can hear what a wine might sound like.”

Before coming to Enlightenment, Harris learned about fermentation by apprenticing at Vermont wineries including a stint at Fable Farm, well known for their wild fermented ciders. Enlightenment was the perfect place for musical mead-maker like Harris to end up because unlike industrial, large scale wineries, Enlightenment Wines offered room for creativity and experimentation.

“Working at Enlightenment felt like a creative laboratory where you can do cool things. Tasting the meads was really eye opening because I had never tasted anything quite like it.”

The space for creativity led Harris to create our newest mead and hit this summer: Mixed Messages. Harris took freshly pressed Merlot and Malbec grape skins from , macerating them with an existing aged honey wine from our catalog. The new blend woke up, refermenting on the skins, welding their unique tannins and structure to the existing mead.

When asked about the biggest thing fermentation taught him, Harris shared a life lesson we can all lean into.

“Everything takes its own time. Some things can become beautiful, but sometimes you have to wait. Everything has its own season and rhythm, especially mead.”
