The tart of the season, with no trending audio!

Hot Honey Zucchini Ricotta Tart

1/2 large zucchini, sliced thin on a mandolin
16oz ricotta
2 cubes frozen basil
1 clove garlic, grated on Microplane
Zest of 1/2 lemon
Pinch red pepper flakes
Pinch salt
1 egg yolk
2 sheets puff pastry, defrosted
Eggwash
Extra Virgin olive oil
Hot honey
Freshly grated Parmesan

In a bowl, combine the ricotta cheese, basil, garlic, lemon zest, red pepper flakes, salt, and egg yolk.

Lightly roll out a sheet of puff pastry and score a half inch border around the edge with a knife, brush with eggwash. Fill the center of the pastry with half of the ricotta filling and top with overlapping slices of zucchini. Sprinkle the zucchini with salt and drizzle with olive oil. Top with grated Parmesan and bake at 400° for 15-20 minutes, until the pastry is puffed and golden. Repeat with the second sheet of puff pastry.

Finish with a drizzle of hot honey and more grated Parmesan.

I got so many questions about what to do about kosher food in Southern Italy. Here’s a peak into some of my meals when I was traveling.

Traveling where there are limited kosher options is never easy, especially when you’re a foodie like me! I’m really not one to shlep a Betty Crocker and pack food, I’d rather just wing it, and I love the challenge.

If there are no kosher restaurants nearby, my best option is to stay in an Airbnb with a kitchen, buy local ingredients and cook! I buy disposable pans at a local store or I kasher a pot there. For protein, I buy fish at the local market, eggs, or tuna.

For this trip, I started in Rome so I stocked up on the delicious local cheese, deli meat, and wine! I brought fresh local produce and ate lots of delicious seasonal fruit!

I had the best time at the Pastorali Pesach program in Capaccio, and then Shabbos with and in Sicily.
