Ingredients:

1 lb ground beef (90/10)
1 head of iceberg lettuce, chopped
2 Roma tomatoes, diced
12 pickles, diced (more if desired)
1/2 cup red onion, diced
1 bottle Thousand Island dressing
Optional: A sprinkle of sesame seeds, Shredded cheese
Directions:

In a sauté pan, cook the ground beef over medium heat until browned, breaking up any large pieces. Drain excess grease.
Wash and chop the iceberg lettuce into bite-sized pieces and place in a large bowl.
Add diced tomatoes, pickles, and red onion to the bowl with the lettuce and toss to combine.
Once the beef is cooked and drained, add it to the salad bowl and toss everything together.
Serve the salad with Thousand Island dressing drizzled over the top. Optionally, finish with a sprinkle of sesame seeds and shredded cheese for extra flavor.

Decadent Chocolate Cupcakes with Creamy Center and Ganache Topping

Ingredients: 💕

For the Chocolate Cupcakes:

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 cup boiling water
For the Cream Filling:

1/2 cup unsalted butter, softened
2 cups powdered sugar
1/2 teaspoon vanilla extract
2 tablespoons heavy cream
For the Chocolate Ganache:

1 cup semi-sweet chocolate chips
1/2 cup heavy cream
2 tablespoons unsalted butter
Directions: 💕

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a large mixing bowl, sift together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt.
Add the milk, vegetable oil, egg, and vanilla extract to the dry ingredients and beat on medium speed for 2 minutes.
Stir in the boiling water until the batter is well combined. The batter will be thin.
Fill each cupcake liner about two-thirds full with batter.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Remove from the oven and allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
To make the cream filling, beat the softened butter in a medium mixing bowl until smooth.
Gradually add the powdered sugar and vanilla extract, beating until smooth and creamy.

Ingredients:

2 tubes (8 oz each) refrigerated crescent rolls
1 package (8 oz) cream cheese, softened
1 cup (8 oz) sour cream
1 pound ground beef or ground turkey
1–2 envelopes or 2–4 Tbsp taco seasoning, to taste
1 medium tomato, chopped
2 cups shredded Mexican cheese blend
1 cup shredded lettuce
Optional: avocado, taco sauce, hot sauce, black beans
Instructions:

Preheat the oven to 375°F (190°C).
Prepare the Crust: Unroll the crescent roll dough onto a large ungreased cookie sheet. Pinch together the perforations to seal. Bake for 8-10 minutes or until light golden brown.
Prepare the Cream Mixture: While the dough is baking, mix the cream cheese and sour cream until smooth. Set aside.

4 garlic cloves
1 onion, peeled and quartered
14 oz (400g) canned plum tomatoes (San Marzano preferred)
1 tsp salt
¼ tsp ground pepper
½ tsp sugar, adjust as needed
2 bay leaves
½ cinnamon stick
3 allspice berries
A pinch of ground cloves
½ cup (120ml) white wine
2 cups (480ml) vegetable or chicken stock
2 tbsp olive oil
Ground beef (amount unspecified in original instructions, typically 1 lb or 450g could be used)

To serve:

Cooked spaghetti or pasta of your choice
Grated Parmesan or Kefalotyri cheese
Flat leaf parsley, chopped
Salt and pepper to taste

Directions:

In a Dutch Oven, melt the butter over medium heat until it starts foaming and begins to brown. Add the garlic and onions, cut side down.
Carefully add the canned tomatoes (they may spatter), breaking them up with a spoon. Stir in salt, sugar, pepper, bay leaves, cinnamon stick, allspice berries, and ground cloves.

For The Salad:

8-10 ounces ditalini pasta, cooked al dente & cooled completely
1 16 oz bag coleslaw mix, tri-color preferred
3 green onions, thinly sliced
1 English cucumber, peeled, seeded & chopped
3 stalks celery, thinly sliced
1 green pepper, seeded & chopped
2 hard-boiled eggs, chopped (optional)
For The Dressing:

1 cup mayo
1/3 cup sour cream
1 1/2 tbsp stone ground mustard
2 tbsp sugar
1/4 cup apple cider vinegar
1 tbsp fresh basil leaves, chopped
Salt & pepper, to taste
Directions:

To Make The Dressing: In a medium mixing bowl, combine all dressing ingredients. Whisk together until evenly mixed. Set aside.
To Make The Salad: In a large mixing bowl, add all the prepared salad ingredients. Gently toss until well combined.
Pour the dressing over the salad and toss again until everything is evenly coated and smooth.
Season with salt and pepper, according to taste.
Serve chilled and enjoy!

¾ teaspoons baking powder
½ cup unsalted butter
¾ cup sugar
1 egg

4 oz. white chocolate, chopped into small chunks
¾ cup blueberries

For Filling:

2.5 oz. cream cheese, softened
1 Tablespoon powdered sugar
½ teaspoon vanilla
3–4 tablespoons blueberry jam
Directions:

Whisk together flour, corn starch, salt, and baking powder in a small bowl. Set aside.
Cream butter and sugar on high speed for 2 minutes until light and creamy. Mix in egg and vanilla.
On low speed, gradually mix in the dry ingredients.
Fold in ¾ of the white chocolate chunks; reserve the rest for topping.
Gently fold in blueberries with a spatula, trying not to break them. The dough will be thick and sticky. Cover and refrigerate for 2 hours.
For the filling, mix cream cheese, vanilla, and powdered sugar. Chill in the fridge.
Preheat the oven to 350°F and line baking sheets with parchment paper.

Recipe

Ingredients:

2 tablespoons vegetable oil
2 shallots or 1 small onion, thinly sliced
3 cloves garlic, minced
1 small red or green chili, minced (de-seeded for milder rice)
12 fresh extra-large or jumbo shrimp, peeled and deveined (about 8 ounces depending on their size)
2 eggs, beaten
3 tablespoons chicken broth or stock
3 tablespoons fish sauce
2 teaspoons curry powder
1 teaspoon sugar
½ cup roasted unsalted cashews
4 cups plain cooked rice (at least 1 day old, cold)
1 cup pineapple chunks (fresh is better, but canned works too–about half a 20-ounce can)
½ cup frozen peas, thawed
¼ cup raisins or currants
2 scallions, finely sliced
Directions:

Add oil to a wok or large nonstick frying pan over medium-high heat. Add the shallots, garlic, and chili, stir-frying for one minute, or until fragrant.
Add the shrimp and toss a few times. If the wok becomes too dry, add a little broth or water.
Push the mixture aside to make room for the eggs. Add the beaten eggs to the wok, and stir fry quickly to cook, as if you are making scrambled eggs. Mix the cooked eggs into the shrimp and shallot mixture.
Combine the chicken broth, fish sauce, curry powder, and sugar in a small bowl, and add to the wok.
Add the cashews and stir-fry for 30 seconds.
Next add the rice to the wok, breaking it up if there are any chunks. Stir-fry until all the rice has mixed with the sauce and is a uniform color.
Add the pineapple, peas, and raisins. Toss to combine, and taste for seasoning. Continue stir-frying for another 1 to 2 minutes.
Add half the scallions and toss. To serve, sprinkle with the remaining scallion. Serve on a platter or in a pineapple, like they do in Thailand.

4 cups frozen corn
1/4 cup mayonnaise
1/4 cup sour cream
Juice of 1 lime
1 teaspoon ground cumin
1/2 teaspoon chili powder, plus more for garnish
1/2 cup cotija cheese, crumbled
1/4 cup chopped cilantro or green onions for garnish
Directions:

Melt butter in a large skillet over medium-high heat. Add the corn and cook, stirring occasionally, until heated through and slightly charred, about 5-7 minutes.
Reduce heat to low and stir in mayonnaise, sour cream, lime juice, cumin, and chili powder until well combined.
Add half of the cotija cheese to the skillet, stirring until the cheese is melted and the corn mixture is creamy.
Remove from heat. Transfer to a serving dish and sprinkle with the remaining cotija cheese.
