On October 1st, I become a little more powerful 🇵🇭

Happy FAHM, fam! May you crunch on lumpia, suck the life out of bulalo bone marrow, eat a hot dog, wear your finest, hang with your barkada, and laugh until you belly hurts. Eat something good, sing about it, and maybe watch Forgotten Island.

Wow I feel very privileged to be able to make such an announcement, but the short version is I am closing new bookings for all projects until 2027! I can start holding dates for January events and I can start new cookbooks March 2027.

Thank you so much for hiring me and sending opportunities my way. I’m so grateful for the exciting life I get to lead. But it’s time to recover physically and mentally to focus on my new job and cookbook projects.

You can keep following my work by signing up for the Burlap & Barrel | Single-Origin Spices newsletter, listening to Fun City Ventures and The Cinema Chefs; or subscribing to my recipe Patreon at Patreon.com/randwiches. My hot dogs will continue at Wonderville, so come say hi on a Wednesday when I am restocking.

Hatch hot honey peanut butter… turon! The easiest dessert ever. Rolled up a piece of banana with a small glob of peanut butter. Deep fried until golden. I made an oat milk caramel to finish it. It was so delicious! I froze the rest for when I need a treat treat.

Hello do you want to put your face in the food I made for Recurse Center?

1. Sun gold tomato, blanched pea shoots, blanched watercress, cucumber, and sugarcane vinegar. Lots of fried garlic!

2. Veggie broth quinoa.

3. Apple and cranberry barley salad. I soaked the fruits in calamansi juice, that’s it. Nothing else!

4. Super tender beef kofte. My secret? Potato flakes to retain moisture and fat. Even though these sat on burners for hours, they were still soft. Also, my hands have now memorized this shape after making 300 small footballs.

5. The sleeper hit of the night: tofu sisig. I’ve been working on this one for the past 2 years. I finally got to a vegan version that I like. Marinated and oven dried firm tofu, roasted bell pepper, sautéed mushrooms, onion, and vegan mayo.

6. Huli huli chicken! I marinate and sous vide mine. Then I grill them slightly to caramelize the juices. Sliced and put back in a reduction of the marinade and jus.

7. Worst photo, but most innovative dish? Vegan pinakbet with long bean and kabocha squash. It is usually steamed vegetables tossed in lots of shrimp paste. After roasting each vegetable, I tossed it in a shiso miso dressing made with Asian pear, garlic, shallot, tomato powder, and emulsified with olive oil.

8. Eva let me take a photo of their plate 🤗

I haven’t posted about my Choy Commons 菜樂市集 haul because I’ve been traveling and eating at restaurants more this past month. But! That didn’t stop me from bringing some of it with me on my trip 🤗

1. Unreal tomato tarte tatin with Burlap & Barrel | Single-Origin Spices sesame seeds under it. You bubble a big slab of heirloom tomato with shallot and garlic until most of the water has evaporated. Then you top it with puff pastry. Cut a few slits to let is vent, bake, and flip! Tadaaaa.

2. Tocino spam musubi with a little shiso instead of nori.

3. Heirloom tomato panzanella with corn, cucumber, and Thai basil flowers.

4. Hot Pot seasoning tortang talong!! Highly recommend grabbing a jar from Burlap & Barrel | Single-Origin Spices (Yeah I work there, but it’s so good).

5. Peach and heirloom tomato panzanella this time.

6-7. Nem nuong summer rolls with carrot, shiso, and choy sum. I hand ground my own small bowl of tahini and turned it into a peanut-y dipping sauce.

8. Blanched and grilled edamame. Simply dressed with Maldon salt.

I skipped a week, but I know it went to a good home. Excited to get back to cooking at home!

Please welcome ON A MISSION FROM DOG to the Wonderville hot dog menu. It’s a shortcut Chicago dog with savory, tomato-y, onion-y brown mustard. It is topped with a crunchy, briny pepperoncini relish with little pops of celery seeds. Now available at the bar while supplies last!

Congrats to Maverick Breton for naming this one 🌭

09/08/2026

It’s time to name our next hot dog at Wonderville 🌭 We are taking inspo from The Weiner’s Circle to make a pared down Chicago dog. We’re planning to make a “Chicago mustard” boosted with sun-dried tomato powder and pickle brine. On top, a pepperoncini relish with celery seeds.

Submit your name suggestion in the comments! The weiner will get $10 usd to buy a hot dog whoever you are. Our community loves video game and pop culture puns like Metal Schmear Solid, The Achar-izard, and Crunchlevania!

You can enter as many times as you want and they will go into Instagram story polls on a rolling basis. Contest ends 9/10 at 10pm. Good luck!

Episode 12 of the The Cinema Chefs is about blood, bones, and offal in Indiana Jones & The Temple of Doom. To accompany it, I wanted to show you a few ways you might have encountered them (and perhaps didn’t know it).

One of my favorite soups from the Philippines is called bulalo. It is a simple soup with corn, bok choy, sometimes cabbage, and always bone marrow or a tender beef shank. The bone marrow melting into the homemade beef broth is what makes the broth so silky, slick, and satisfying.

If you want the recipe, search for bulalo on TASTE. I used sliced beef shank for this to get the big jewel of marrow. You can also use split marrow bones or use whole beef shank with the bone in tact.

Marrow and bones are important to pho. You parboil them and scrub them clean before making broth to get a nice, clear extraction.

Pho broth is an arduous task, but well worth the effort at the end. I mean, you get to have pho in your house! It is savory and nice, perfectly paired with fresh herbs like basil, cilantro, and mint.

I’m a big fan of bourride, a seafood soup popular in Provence and Languedoc (woefully under-sung as people mostly know bouillabaisse or chowder). Seafood broth is fortified with bone marrow and bacon to make a luscious fish stew.

Most banh mi will have pork or chicken liver in them. At some Vietnamese spots, you may also be able to add giò thủ or thinly sliced head cheese. I’m a huge fan of the minerality of chicken liver pate. Rustic pork pate has hammy bits and more fat. Beef liver pate has an irony taste, but all of them are excellent with any manner of pickle. Do chua, cornichon, pickled onions—mix and match to see what you like together.

Speaking of head cheese, my local butcher shop The Meat Hook sometimes has it in a loaf shape that you can enjoy on toast.

At Eataly, their head cheese looks more like culatello or lean prosciutto sheets. I like to put those on a warmed plate and sprinkle it with fennel pollen for a more spreadable, pate experience.

I save my bones in the freezer and when I have enough, I make broth in my slow cooker. Any broths with bones need about four hours and it’s best if you can roast them beforehand for extr

In honor of The Cinema Chefs season 2 launch and our first episode about Last Holiday starring our fav, Queen Latifah, I wanted to share some of my favorite things about New Orleans. Swipe to see all of my recs ➡️

No trip to NOLA is complete without a visit to Cafe Du Monde. It’s really fun even if you don’t drink coffee like I do. The fresh beignets are worth the flight alone.

My first stop is always Dat Dog on Frenchman Street. In fact, I much prefer the vibe there more than Bourbon Street. You can try all kinds of animal hot dogs. This is the alligator sausage with tomato, onion, and creole mustard.

I think this one was andouille with dat sauce and sport peppers!

The famous muffuletta from centralgrocery! I try to pick one up on my way to airport so I can eat it on the plane.

The best cheese shop in NOLA is St James Cheese Company. I couldn’t wait to get to the park, so I bit into this wedge of Sequatchie Cove Creamery Cumberland.

Hail to TURKEY AND THE WOLF/mason h! The vibe inside is my teenage bedroom and food is as fun as a 90’s toy commercial come to life.

🙏 New Orleans is a special place. Support local businesses the next time you go.

And if you read this far and are going to New Orleans soon, let me know! I want to hear your spots.
