High in the Sour Cream Sierras, we had a blast at the 4th Annual Borscht Belt Festival. For us, this region of upstate NY is more than a place where our ancestors vacationed and stand up comedy bloomed. It’s a place where Ashkenazi - American cuisine became emboldened, encouraged by the 3 epic meals a day in hotel dining halls. Kosher style French dishes, cottage cheese and a melon, endless bowls of bouillon with kreplach, of course.

The Borscht Belt is a sacred region for American Jewish culture and food. More than a geographic area in the Catskill Mountains, it’s a place where Jewish New Yorkers escaped the heat of the city, spent decades devouring multicourse meals, and laughing with the comedy greats.

First published in 1901 with a total of 43 subsequent editions released until 1991, The Settlement Cookbook is more than just a cookbook. It’s a story of American immigration throughout an entire century and a record of what assimilation can look like over time.

Later this month on Meet Me at the Deli, we’ll be joined by scholar and friend, Nora Rubel , whose upcoming book, Recipes for the Melting Pot, explores the many lives of The Settlement Cookbook, including some fascinating commentary on why Jewish American foodways are the way they are today.

While we have many questions for Nora, we know we’re not the only ones with multiple copies of The Settlement Cookbook on our shelves (featured here are the 1940 and 1965 editions, complete with archival bookmarks from past users- so cool!). For the uninitiated, p’tcha is a jellied calves foot, an Ashkenazi delicacy. Heavy on the garlic. Similar to other aspics. Ever since we launched The Gefilteria, people have asked us about it. Whether it’s out of nostalgia or disgust, the fascination with jellied meats has followed us wherever we’ve gone. This is exactly why we created our podcast in the first place.
