Have you heard of Gildas? They’re briny and salty Basque pintxos — skewers of anchovies, pickled peppers, and olives that are often served with Vermouth.

In our first episode of , Jeffrey brought Liz his deli-influenced version based off of a revelation he had while in Madrid: swap the anchovy for schmaltz herring, combine with sour pickles and pickled onions, and suddenly you’ve got the perfect dish for a cocktail party, a kiddush luncheon, or (ahem) an upcoming Passover seder.

Deep in the pandemic, we emerged out of quarantine to make Hanukkah dishes with for her award winning series, Taste the Nation. A few years later, and the series inspired an incredible cookbook.

We absolutely love the way that Padma adapted our sweet and sour stuffed cabbage recipe. We really really love the step-by-step cabbage rolling graphic on page 106. And we are truly proud to be a part of this incredible collection of recipes and stories overall.

Happy (almost) Hanukkah to all.

Pro-tip: Stuffed cabbage makes for an incredible complement to the oil extravaganza that is most Hanukkah meals 😋🥬
