If you’re a lover of flavorful, rich, potent rum distilled from sugarcane juice and still haven’t tried El Amparo, you ought to add it to the top of your list of rums to try next.

Distilled on a pot still in the city of Jipijapa, Ecuador, El Amparo is made by Carlos Baque Zorrilla, the third generation of his family to produce rum. The Cubana Negra variety of sugarcane is harvested by hand and the fresh juice is fermented naturally with the ambient yeast of the distillery. Bottled unaged at 57.5% abv, this is one for fans of Mexican aguardiente, Haitian clairin, Cape Verdean grogue, and all of the other unique, terroir-driven, expressive rums of the world.

On the nose, El Amparo is bright and vegetal with aromas of fresh banana, cut grass, bell pepper, and gentian root. The palate is warm with florality and tropical fruit – think fresh pineapple, geranium, and papaya. Notes of ginseng, acacia honey, and spruce tips mingle throughout the ethereal, long finish.

If you’re not drinking Pineau des Charentes, you’re missing out.

What is it, you ask? Pineau des Charentes is a combination of Cognac and grape must – the freshly crushed juice and solids of the fruit. The addition of a distilled spirit halts the fermentation process in the sugar-rich grapes while also fortifying and stabilizing the mixture. The result is a naturally sweet, intensely aromatic “vin de liqueur” as the French call it, and it makes for an incredible aperitif, digestif, or cocktail ingredient.

In the late 1990s, David Ramnoux inherited an old vineyard from his father in the village of Mareuil. With 60+ year old Ugni Blanc vines and 25+ year old Colombard vines, David and his wife have maintained and operated the vineyard with great respect and dedication to the environment, having been certified organic and biodynamic over twenty years ago.

Aged on the lees for over a year (a difficult thing to do when farming and producing biodynamically), this Pineau des Charentes is floral with loads of orchard fruit notes, a balanced and honeyed sweetness, and enough complexity to keep you going back for more.

15 years is a long time. These three rums, arriving on US shores in the near future, were all distilled 15 years ago. It just so happens that PM Spirits was founded 15 years ago as well.

🇯🇲 Hampden 15 stands as the oldest release in Hampden Estate’s history. Fifteen years of Jamaican tropical aging have deepened the distillery’s signature heavy pot still funk into something richer and more complex than ever. Layers of ripe fruit, oxidative depth, and that unmistakable LROK mark character.

🇧🇧 Foursquare Indomitas is a marriage of two 2010 distillates from Barbados: pot still rum aged 15 years in ex-Bourbon, and a Coffey column distilled rum that spent 6 years in ex-Bourbon before crossing into ex-Cognac for another 9. Fully tropically aged, blended into something of remarkable structure.

🇹🇭 Shakara 15 spent a decade and a half in the Thai heat after being distilled from local molasses. Matured in ex-Bourbon barrels, the result is a rum of rare concentration that somehow never loses its energy. Think dried fruits, soft spices, and a long, oxidative finish.

There’s no mistaking a bottle of Rochelt on the backbar. Each handmade, emerald green Tyrolean “pincer” bottle is produced by glassblower Alfred Ecker and paired with an intricate silver closure created by artist Otto Jakob. Anybody who has ever tasted the liquid inside, however, knows that this incredible vessel only captures part of the beauty of Rochelt. To truly understand just how special this eau de vie is, it has to be tasted.

Coming soon to New York via PM Spirits Distributing, from the mad geniuses at Dark Arts Whiskey House: The Empyrean Volume 2. This limited release is a 7.5 year old bourbon finished in red port and white port casks and continues Dark Arts’ pursuit of transformation through contrast and precision. Empyrean refers to the highest heaven, the celestial realm of fire and light in the ancient European cosmologies.

The second iteration of this whiskey, it is bottled at a cask strength of 55.75% abv and contains multitudes. The layered, evolving profile opens with orchard fruit, raspberry jam, and shortbread cookies leading into a palate that deepens with honeyed, ripe red fruit, baking spice. and oak. The port finishing coats the palate with a soft, sweet, oily texture and the finish is pleasant with a lingering warmth that is unmistakably Dark Arts.

Any day we receive new rum from Alambique Serrano is a good day. These two releases have just landed in New York and will make their way to other markets in the coming weeks.

BLEND #11: BESADIABLOS: The spiritual successor to 2024’s Matadiablo release, this is a five cask blend of pot still and Krassel still rums that aged in new French oak, new Hungarian oak, ex-red wine American oak, ex-rum American oak, and ex-Bourbon American oak. It was bottled at a cask strength of 59.6% abv and is remarkably potent yet nimble, with dozens of layers to unpack.

ALAMBIQUE DE COBRE: Clocking in at a whopping 71.1% abv, this is a rare opportunity to taste unaged, 100% pot still rum from the Krassel brothers. This mark is created by fermenting fresh cane juice in pine tanks and distilling on pot stills with an average output of just five liters per hour, making it significantly less efficient than the Krassel Still. The results, however, are well worth the extra time and effort. This rum is lactic, funky, and long on the palate.
