If you’re a lover of flavorful, rich, potent rum distilled from sugarcane juice and still haven’t tried El Amparo, you ought to add it to the top of your list of rums to try next.
Distilled on a pot still in the city of Jipijapa, Ecuador, El Amparo is made by Carlos Baque Zorrilla, the third generation of his family to produce rum. The Cubana Negra variety of sugarcane is harvested by hand and the fresh juice is fermented naturally with the ambient yeast of the distillery. Bottled unaged at 57.5% abv, this is one for fans of Mexican aguardiente, Haitian clairin, Cape Verdean grogue, and all of the other unique, terroir-driven, expressive rums of the world.
On the nose, El Amparo is bright and vegetal with aromas of fresh banana, cut grass, bell pepper, and gentian root. The palate is warm with florality and tropical fruit – think fresh pineapple, geranium, and papaya. Notes of ginseng, acacia honey, and spruce tips mingle throughout the ethereal, long finish.
