We still have boxes available for delivery on July 26. Why buy the whole cow when you can buy 1/8 of it. A 1100 pound steer will yield about 8 boxes. $375 for a 50 pound box.
The typical box contains the following:
30-35 one pound packages of ground beef,
5 packages of cube steak, tenderized
2 Filets*
3 New York strips*
3 Ribeyes*
4 Boneless chuck steaks*
3 top sirloin*

Beef distribution day. We will box and deliver 7 boxes today. There are still a few boxes available for the end of May.
FYI, after substracting the processing fee, our beef is around 5.35 a pound your cost, which translates to around 3.65 hanging weight and 1.85 live weight.

For transparency, here is the cut sheet from our last steer. He had a live weight of 1150 and a carcass weight of 612. We determine the maximum number of 50 pound boxes we can sell by dividing the number of packages of ground beef by 33. In this case, 249/33=7.5 so at most 7 boxes possible. We then divide the number of steaks equally into the seven boxes, giving each box 21 steaks. We weigh each box to make sure each weighs at least 50 pounds and add additional ground beef if needed. Basically, each box contains 1/7 of the yield. At $375 a box, we receive $2675. The processing for this steer was $806, leaving $1819 total income. That divided by his live weight is $1.58. Fed cattle was $1.64 on the live cattle market last week. Boxes for our next delivery on March 22 are still available.
