Cooking Grass-fed Beef
100% Grass-fed meat is from cows that are pasture-raised on grass, from start to finish. They are rich in good fats, and managed sustainably. Compared to conventionally raised meats, which get little or no exercise, it's leaner and there is true muscle integrity in the meat. But leaner doesn't mean tougher. The VINEYARDS . . .

The Estate has already produced award winning wine. It is twice fermented and casked for a minimum of one year before bottling. As our vineyards take root we will produce and blend grape from established national and international vineyards.

Our goal here at Festina Lente is to produce extraordinary and gorgeous quality French American and American Hybrid wines for local and international sale.

All Festina Lente wines are additive and chemical free. Our Circe Cadet, a blend of Italian Nebbiolo, and American Cabernet Franc and Zinfandel, took place at the Florida International Wine Competition where there were over 600 entrants, and our SanSyarh, an Italian Sangiovese and American Petit Syrah, is a fine dining favorite here at the Estate.

Our cattle . . .

Our Braford cattle were bred to suit the scorching heat and dry Florida summers. The stock is a cross between the prized beef cattle, Hereford, and the heat and disease resistant Brahman or Zebu cattle. The Braford heifers are noted for their pest and insect resistance, superior maternal ability, early puberty, fertility and ease of calving.

Festina Lente also produces OLIVE OIL . . .

We currently have two small Arbequina olive groves. The Arbequina is originally from Aragon and Catalonia, Spain. It produces a fruity, buttery olive oil rich and flavorful with peppery back tastes. It can be harvested whether green or black. The Estate currently produces small batch, hand crafted, 100 % Extra Virgin Oil.

We offer sheep, too!

The Florida Cracker sheep is the oldest sheep breed in America. While wandering in the predator infested backland, overrun by wild hogs, panthers and black vultures, and native hunters, the sheep, through natural selection, developed special characteristic to deal with the semi tropical warm, wet predator infested environment. They became not only heat but also gastro-intestinal parasite resistant. Weighing between 90 and 180 pounds, they produces a fine wool with pre-Marino contributions and mild, tender meat.

Did you know . . .

In 1563 the King of Spain ordered 200 cows, 200 pigs, 200 horses and 400, multipurpose, Chuarre Sheep to be transported to the settlement and fortress of San Augustine in what is today northeast Florida coast. These animals, many of which escaped into the semi-tropical backlands and swamps during the Spanish occupation, became the agricultural foundation of America. The Florida Cracker Cow, which evolved into the Texas Longhorn and the Chuarre Sheep, are key examples of this ancient bloodline.
