We are in our final month of ice cream for the summer! For this round, we made a really bright and beautiful blood orange raspberry sherbet and a classic chocolate, which twist together better than Uma Thurman and John Travolta...

Fun fact: Sherbet has roots in the Middle East and is traditionally made with fruit, sugar, and a small amount of dairy. That touch of milk, when done right, gives it a silky, creamy texture.

Labor Day weekend is almost here, and as always, we’re stocking the case with everything you need to make the most of the last stretch of summer.

From house-made sausages, including a new creation we’re really excited about, Xiaolongbao, a pork and shrimp sausage that tastes just like a soup dumpling! We’ll also have chorizo, currywurst, and classic favorites like spicy Italian and breakfast sausage. Plus, beautiful cuts of beef, from strip steaks and Denver steaks to porterhouses and ribeyes, along with local chicken, pork, and lamb.

Above all else, the most important word here is local. All of these proteins are sourced from local farms, including Leaping Bear, Yates Farm, Shepherds Brook, and pork from Archway Farms. We appreciate these local farmers so much and are honored to have their craft and care in our cases every day.

Feeling like seafood is the call for the weekend? Our seafood case will be stocked with salmon, hake, swordfish, littleneck clams, oysters, mussels, and plenty more.

Fire up the grill, gather your people, and enjoy one more great summer celebration!

Every Wednesday is Burger Day! We just love cooking our juicy burgers so much, we dedicate an entire day to smashing patties! Locally sourced, dry-aged, house-ground... all tangy secret sauce, light and fluffy bun... every Wednesday... and $1 off....

Late summer has arrived, and we’re fully leaning into it with two new ice cream flavors!

The first is Sweet Corn, made with local Edgewater Farm corn for a creamy, subtly sweet take on one of the season’s most beloved flavors. Our second is Horchata, a cinnamon-forward flavor with just the right balance of warmth and sweetness.

We are always looking for ways to improve upon the things we make here, especially when it comes to using local ingredients that can have a noticeable impact. That’s why we recently switched to using cultured butter from Ploughgate Creamery in our laminated pastries and croissants.

Unlike standard sweet cream butter, cultured butter is made by allowing the cream to ferment with beneficial cultures before it’s churned. That extra step develops a deeper, more complex flavor, which really shines in something as butter-forward as a croissant or our other laminated pastries.

It works especially well for our lamination process. Ploughgate’s high-quality cultured butter has the pliability needed to roll into thin, even layers between the dough. Those distinct layers of butter and dough are what create the crisp exterior, flaky structure, and airy interior that make our laminated pastries so special.

And don’t worry, we sell a number of their incredible butters in our cold section as well. So come in for a pastry, take home some cultured butter, and see if you notice the difference in your own kitchen too!

We thoroughly enjoyed gathering with all of you last weekend at Ascutney Outdoors, and throughout our summer music series over the last few months.

Now, we’re looking ahead to our culminating event, Vermont Food + Music Festival, happening September 18th + 19th at the base of Mount Ascutney.

We’ll gather for two days of performances from Hiss Golden Messenger, Shovels & Rope, Kat Wright, and so many more, alongside incredible Vermont chefs, local makers, and the beginning of fall on the mountain.

Come relax, eat well, settle in for some truly remarkable music, and take in the beautiful Vermont landscape with us.

We’re serving up two new homemade soft serve flavors: Brown Butter Peach, made with peak-season Pennsylvania peaches, and Maple, featuring local maple syrup from Hillside Maples.

This one goes out to our guy, Taylor.

Yesterday, Taylor celebrated three years here at Brownsville Butcher & Pantry. He joined our team with food industry experience and has since grown into our head butcher, the best cutter on our staff, and someone our entire team genuinely loves being around.

His knowledge, kindness, and willingness to go above and beyond know no bounds. He’s always ready to lend a hand, answer a question, or take the extra time to make sure every customer leaves with exactly what they need, along with a deeper understanding of the cuts they purchased.

We’re beyond grateful to have Taylor on our team. Over the last three years, he’s become one of the people who truly defines what this place is all about. His work, character, and dedication have helped shape the culture we’re so proud of every day.
