🔥 Brisket 101: Why It Costs What It Costs 🔥
A little behind-the-scenes look at what really happens to a brisket over 24 hours:

1️⃣ 18.4 lbs — fresh out of the package, big and proud.

2️⃣ 14.8 lbs — trimmed, seasoned, looking ready for greatness.

3️⃣ 8.35 lbs — after a 14-hour overnight smoke. Jiggly, beautiful… and nearly half the size. 😳

That’s a 45% yield on this brisket (average is about 50%).
So when brisket runs around $5/lb wholesale, that 18+ lb whopper is already about $100 before it ever hits the pit.

After trimming and cooking, you end up with about 8 usable pounds, putting the real cost closer to $12.50–$13/lb — before seasoning, wood, labor, or time.

BBQ isn’t pricey because we want it to be…
It’s pricey because brisket goes through a whole lot of shrinkage in the heat.

Holiday season is here! Needing a turkey but don't want to spend hours prepping and cooking? Maybe you want to free up oven space for desserts? Or maybe you just want to relax and not feel so rushed. Let me do it for you! Smoked or deep fried, both brined and injected for maximum juiciness and flavor. Offering whole turkeys around 15-18 lbs, and either breast roast, or whole breast.

All orders require a $25 deposit with an order deadline of 5 days before needed.

If you want brisket, I can smoke you one. But it will be around $200-250. Beef prices are ridiculous right now!

Beef prices have been ridiculous lately. Last month, prime prices at HEB and Costco were at $5.99 /lb, $6.42 /lb at Sam's. I'm too scared to go look now.

Finally home and unloaded from the cookoff! We had a great time, regardless of the judging results. Thank you to everyone that came to hang out with us! Great barbecue, football, and camaraderie! Forgot to take more pictures. Flavor is amazing on the ribs and brisket! Beans are great, and Kayla's blood orange margarita is delicious! We weren't that happy with chicken. We started it a little too late and rushed through it. We'll be out here all night with the game on, so come join us and eat!
