🌧️🍲 Rainy Arizona Days Call for Comfort Food! ❤️

We don’t get many days like this in Arizona, so when we do, I absolutely love them! The cooler temperatures, the sound of rain, and a big pot of homemade soup just seem to go together.

Last night, I came home craving some good old-fashioned comfort food. I had a couple of packages of our Classic Bison Patties already defrosted, so I decided to get a little creative with what I had in the kitchen!

I crumbled up the patties, browned them with some bacon, and added potatoes, cabbage, carrots, beef broth, and a few simple seasonings.

The result? A big pot of hearty, homemade Country Bison, Cabbage & Potato Soup! 🍲

Nothing fancy, just simple ingredients, good flavor, and the kind of meal that warms you up from the inside out.

And if you like your soup a little richer and creamier, you can always stir in some cream cheese at the end!

Sometimes the best meals are the ones you throw together without much of a plan.

I asked ChatGPT for a quick dinner idea using the ingredients I already had on hand… and this is what it came up with. 👇 And let me tell you—it did not disappoint! 🤤🦬

🥩 Pressure Cooker Bison Chuck Roast

Ingredients:
2½–3 lb bison chuck roast, cubed
1½ lb potatoes
3–4 carrots
1 onion
8 oz mushrooms
2 cups beef broth
2–3 Tbsp tomato sauce
1 Tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp thyme
½ tsp rosemary
Salt & pepper

Directions:
Brown seasoned bison. Sauté onion & mushrooms. Add tomato sauce, broth & seasonings. Pressure cook 25 min + 10 min natural release. Add potatoes & carrots; pressure cook 4 more min + quick release.

Thicken the gravy with a cornstarch slurry (or GF flour).

Tender, hearty and ridiculously easy. 🤤🦬
