February is National Potato Lovers Month! Potatoes are fascinating tubers that have been a staple in diets around the world for centuries. Originating from the Andes mountains in South America, they were first cultivated by the Inca Indians over 8,000 years ago. Today, they are the fourth largest food crop globally.

Did you know that potatoes were once used as a measure of time? In the early 19th century, French fry vendors in Paris used the term "potato" to time cooking intervals. Each "potato" represented about 2.5 minutes, the time it took to properly cook a batch of fries.

Whether you're mashing them, baking them, or crafting with them, potatoes are versatile and full of surprises, making them a fascinating part of our culinary and cultural history.
