CLASSIC FRIED POTATOES AND ONIONS WITH SMOKED POLISH SAUSAGE
Ingredients:
- 1 pound smoked Polish sausage, sliced into 1/2-inch rounds
- 4 large russet potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 3 tablespoons vegetable oil or bacon grease
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
1. Prepare the Ingredients:
- Slice the Sausage: Cut the smoked Polish sausage into 1/2-inch rounds.
- Slice the Potatoes and Onion: Peel and thinly slice the potatoes. Thinly slice the onion.
2. Cook the Sausage:
- Brown the Sausage: In a large skillet, heat 1 tablespoon of vegetable oil or bacon grease over medium-high heat. Add the sausage slices and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
3. Cook the Potatoes and Onions:
- Fry the Potatoes: Add the remaining 2 tablespoons of vegetable oil or bacon grease to the same skillet. Add the sliced potatoes in a single layer. Cook, stirring occasionally, until the potatoes start to turn golden brown and crispy, about 10-15 minutes.
- Add the Onions: Add the sliced onions to the skillet with the potatoes. Cook, stirring occasionally, until the onions are soft and caramelized and the potatoes are fully cooked, about 10-15 minutes more.
4. Combine and Finish:
- Season and Combine: Sprinkle the paprika, garlic powder, salt, and black pepper over the potatoes and onions. Stir to combine. Return the browned sausage slices to the skillet and stir to combine. Cook for an additional 5 minutes to heat everything through.
5. Serve:
- Plate the Dish: Transfer the fried potatoes and onions with smoked Polish sausage to a serving platter.
- Garnish: Garnish with chopped fresh parsley.
- Enjoy: Serve hot and enjoy your hearty and delicious meal!
