On Saturday I created a rather hostile post here about problems I had with my new sausage stuffer. The problem was real; what was unreal was the response I got from The Sausage Maker Inc, in particular Johnny Paa.
The outreach via FB, e-mail, and a personal phone call is something unheard of these days. TSM is making this right, they're doing it promptly and thoroughly. I cannot be happier with Johnny, corporate ownership, and management!

Ok, we just pursched a 100lb electric smoker kit....have it all wired up and I believe the pakstat series 1 is bad.....all wired correctly and nothing on the load side of the controller.

I used the Bactoferm Mold-600 on about 12 pieces of capocolla and Lonzino. They have been hanging in the curing room for several weeks now. All of them developed a nice white mold but one of them has a substantial amount of green mold. Please advise.
So, I just ordered your Celery juice powder by way of Amazon. Had I known before tracking my package that you were right in Buffalo, I could've had it in 20 minutes lol.
I'm not very happy with SausageMaker. A week ago I ordered a curing culture that cost $60 with shipping. Today, I received the wrong culture $18. I thawed a bunch of meat and fat when I got a shipping notice and it isn't going to last until they ship the right culture. They somehow "lost" my pH meter I ordered from them awhile back and had to send one "overnight" that I received two days later. Somethings rotten in Denmark.
I would love to get the old recipe from Rudolph Frey for Frey’s hot dogs before they sold to Russer Foods in the 90’s... those were some good dogs. I’d love to make them.
