*Chile Verde Sopita**
Ingredients:
* 1 lb (450 g) pork shoulder, cut into small cubes
* 2 tbsp vegetable oil
* 1 medium onion, finely chopped
* 3 cloves garlic, minced
* 3–4 tomatillos, husked and chopped
* 2–3 poblano peppers, roasted, peeled, and chopped
* 1–2 jalapeños (optional, for extra heat), chopped
* 4 cups chicken or vegetable broth
* 1 tsp ground cumin
* Salt and pepper to taste
* Fresh cilantro, chopped (for garnish)
* Lime wedges (for serving)
* Tortilla chips or strips (optional)

Instructions:
1. **Sear the pork:** In a large pot, heat oil over medium-high heat. Brown the pork cubes on all sides, then remove and set aside.
2. **Cook aromatics:** In the same pot, sauté onion and garlic until soft and fragrant.
3. **Prepare green sauce:** In a blender, combine tomatillos, roasted poblanos, jalapeños, and a little broth. Blend until smooth.
