Went to Fresh Market to check out the fish selection. No Faroe Island salmon 😭, cod was meh.. fish guy said “try the grouper! It’s great!” I’ve never cooked grouper, but I love it! He gave me an idea of dredging it in flour then coating with crunched up salt and vinegar chips, then pan fry. There is no way I’d get the salt & vinegar chips past the man 🤣
Instead I pan seared in avocado oil, garlic, and butter (the fish was seasoned with S&P and garlic) 4 minutes each side. Once the fish was done I removed it from the pan and added butter and lemon to the pan and made a simple sauce to pour over the fish!
It was delish!!

Today’s food prep included roasted butternut squash soup!
Once roasted I blended with chicken broth, then heated on the stove and added sage, thyme, salt, pepper, butter and heavy cream.
Once cooled some will be frozen, and some for lunch tomorrow!

It’s Sunday Quiche day! (Aka clean out the fridge)
Today’s creation is smoked ham, onion, asparagus, fresh corn, fresh thyme & oregano. The cheeses were cheddar, mozzarella, and feta!
Smokey ham and the sweet corn was amazing! 🌽🐷

Prince spaghetti night was morphed into lasagna night (and plenty for the next month)!
Made easier with a couple of shortcuts- no boil noodles and jarred marinara. This is a really tasty sauce found at Costco and pretty inexpensive!
