The Hailey Farmers Market is happening until 1pm today and every Saturday this summer! Head over to Roberta McKercher Park in the to grab your local goods! Idaho is one of the largest producers in the nation for dried bean production. Have you cooked with dried beans? It takes a some advance preparation, but is well worth it:
1) Purchase locally grown, dried beans: 1000 Springs Mill is sold at Atkinsons' Market, Agrarian Harvest sells beans through Kraay's Market & Garden online marketplace
2) Soak beans overnight in water
3) Drain beans, place in a pot, and cover with 4" of fresh water
4) Simmer until tender!

Last month, Wood River Farmers Market Board President Katie Zubia began collecting leftover produce from the Ketchum market for The Hunger Coalition. So far, she's rescued hundreds of pounds of zucchini, squash and green beans from Agrarian Harvest, 50 pounds of tomatoes, zucchini and squash from Prairie Sun Farm, and 50-plus pounds of tomatoes from King's Crown Organic Farm. Yet another reason to love our local farmers!
There are only only three more Ketchum Farmers Markets this year! Stop by River Run parking lot between 2:00-4:45PM today to stock up on local food. What's fresh? Cucumbers from Agrarian Harvest, buttercrunch lettuce from Lookout Farm, scallions from Squash Blossom Farm, spring mix from Shooting Star Farm, potatoes, summer squash, tomatoes and more!

You were right John, those purple potatoes make the BEST mashed potatoes. Two thumbs up!
