Banana pudding cheesecake squares
Ingredients
For the Blondie Crust:
1/2 cup unsalted butter melted
1/2 cup light brown sugar packed
1 large egg yolk
1/2 cup all-purpose flour
Pinch salt
1/4 cup mashed ripe banana
1 teaspoon pure vanilla extract
For the Cheesecake Topping:
2/3 cup heavy whipped cream
16 ounces cream cheese 2 blocks
1 cup granulated sugar
3.4 ounce instant banana pudding powder 1 box
1/2 cup milk
1 teaspoon vanilla extract
Optional: Powdered Sugar for extra sweetness
Garnish: Nilla wafers
Instructions
For the Blondie Crust:
Preheat oven to 350 degrees and prepare a 8x8 baking pan with non-stick method of your choice.
In a large bowl, whisk together butter and sugar until combined. Next whisk in the egg yolk, flour, salt, banana and vanilla until well combined.
Add blondie batter to pan and bake for 15-20 minutes until just set.
Cool to room temperature and prepare topping.
For the Cheesecake Topping:
Using your hand mixer, whip heavy cream in a medium sized bowl until stiff peaks develop then refrigerate and clean beaters.
In a separate bowl, beat cream cheese until nice and fluffy with hand mixer.
Slowly add in the sugar, banana pudding powder, milk, and vanilla extract. Beat until well incorporated.
Carefully fold pre-made whipped cream into the cream cheese batter.
Taste and add a little powdered sugar if you prefer it a little sweeter.
Pour and evenly spread cheesecake topping over blondie crust and freeze for at least 2 hours or until completely firm.
Garnish with nilla wafers and serve.

PHILLY CHEESESTEAK STUFFED PEPPERS

Ingredients
3 Bell Peppers
1 lb. Beef (Ground)
8 oz. Mushrooms (Chopped)
1 Onion (Chopped)
2 tbsp. Ketchup
1 tbsp. Worcestershire Sauce
1 cup Beef Broth
8 oz. Mozzarella Cheese (Shredded)
Salt And Pepper To Taste
Directions
Preheat the oven to 350 degrees. Slice the tops off of the peppers and deseed them.
Place the ground beef and onion in a skillet over medium high heat. Saute until the beef is browned and the onion has softened.
Stir in the chopped mushrooms.
Mix in the beef broth, Worcestershire sauce, ketchup and salt and pepper to taste.
Simmer until the liquid is almost all absorbed. Stuff the peppers with the meat mixture.
Sprinkle with the cheese. Tent a piece of tin foil over the baking dish and bake for 45 minutes.

We cooked the Hill Country State Championship cook-off a few weekends back. For not cooking in sometime due to family things, it was a great feeling on how I did. There were 132 teams, and when the smoke cleared we were blessed with a first place chicken call and finished 6th overall. I want to thank my family and also Oakridge BBQ for their sponsorship.

Just got to love it when the butcher has a bad day. Prepping competition meet is like opening up a box of Cracker Jack, you never know what you're going to get sometimes it's a great surprise then there's the other surprise. Looks like a little monster, cut for the mouth and a stab wound for the eye. And the search starts over for a good brisket.

We where heading to Lubbock today to go cook the KCBS Red Raider cook off also was going to spend some time with Cory, Pam and Riley before school started up. But with Harvey building up and family and friends heading this way we here to help. So instead of cooking a cook off I well be cooking to feed a few peeps. Good morning BBQ world. We did a low and slow brisket starting yesterday around 7:40 pm in a James Brook drum. We ran a bbq guru with it also and the temp was set at 220 deg. At 7:30 am warp in Butcher paper and we bumped it up to 240. The brisket is for a family that is having a celebration of life today. We are also getting ready to do some hotdogs for the kids because it baseball tournaments today.

We want to say that are prayers go out to all the gold star family's on this Memorial Day.
