Coconut cake has been on our table for all of our family holidays, usually made by my Mom, Sherry Eaves Steele, or Aunt Lucille Clark. I remember PawPaw, Willie Eaves, "drizzling" homemade cane syrup over it. To him it must have complemented it well. I, on the other hand, would consider a lavender simple syrup between layers, a drizzle of honey, or jam.

~When life gives you lemons, live it with zest~

I love fresh herbs and all things citrus! This Lemon Rosemary Cake with honey Goat cheese frosting is refreshing. The Rosemary is subtle. I personally love this with a cup of hot tea or coffee.

I tried a new recipe. This isn't as pretty as the coconut roll. This one is usually found in a pan. It has such a gentle flavor.
